What is better than a pumpkin spice latte? A pumpkin spice smoothie jar! Well… maybe both are equally good. But, this smoothie jar is loaded with WAY more nutrients.
What makes it healthy:
- Chia seeds are a nutrition powerhouse! The tiny seeds contain so many nutrients like calcium, manganese, magnesium, and phosphorus. They are an excellent source of fiber, protein, and fat, namely heart healthy omega-3 fats. And if all of that doesn’t make them great enough, they are also an excellent source of antioxidants! Those antioxidants protect the delicate omega-3 fats from going rancid.
- Sweet potatoes are an excellent source of beta carotene. In your body, beta carotene not only acts as a powerful antioxidant, but also is converted to vitamin A!
- Soy milk compared to cows milk has about half the calories with similar nutrient composition. It is great for your bone health. Make sure you are choosing organic soy milk. Soy is one of the largest GMO crops in the United States.
- Banana are one of the world’s most popular fruits for a reason! Not only are they delicious, but they are loaded with nutrients! They contain important nutrients like potassium, vitamin B 6, vitamin C, magnesium, copper, manganese, and some fiber!
- Collagen is great for your gut health! Taking collagen can help repair damage gut linings. The collagen is good for your skin, hair, nails, and bones!
First, make the chia pudding
First, start by combining the chia seeds, the pumpkin pie spice, and the milk. You can substitute any type of milk you like in place of soy milk. Another substitute you can make is cinnamon, nutmeg, ginger, and cloves. A lot of people like to make their own pumpkin pie spice jar and have it on hand!
Stir a few times every 10 minutes to make sure it gels properly. Set aside.
Then, make the pumpkin spice smoothie
Add the bananas, sweet potato, and the collagen to a blender. You will want a high powered blender to make it this thick since you are not using any liquid. Find the one I use for all of my smoothies on the kitchen gadgets page of my amazon shop account.
Blend your smoothie until it is thick and creamy. You may need to turn it off every couple of minutes to stir it to make sure the frozen bananas are evenly combining.
Pile your smoothie on top of the chia pudding.
Enjoy!
