Smoothies are my favorite breakfast to eat in the summer time! I've made so many different kinds of smoothies over the years and this time I wanted to make a really dark red one! The red color in my healthy strawberry banana smoothie actually comes from beetroot powder! If you don't have beetroot powder, you can absolutely skip it and it will be just as delicious.

WHAT IS A STRAWBERRY BANANA SMOOTHIE PARFAIT MADE OF?
A classic strawberry parfait is made with vanilla yogurt, a layer of strawberries, more vanilla yogurt, and then topped with crunchy granola. I made a strawberry parfait with a twist. My healthy strawberry banana smoothie parfait is made with nutrient loaded chia pudding instead of yogurt, a layer of fresh strawberries, and topped with a thick strawberry smoothie.
ARE STRAWBERRY BANANA SMOOTHIES HEALTHY?
Yes! Strawberry smoothies are excellent for your health. Strawberries are loaded with fiber, antioxidants, and other essential nutrients. Strawberry smoothie parfaits are also an excellent breakfast option for weight loss because there are no added sugars, and are high in protein and fiber which will keep you full and satisfied longer.
HEALTHY STRAWBERRY SMOOTHIE PARFAIT INGREDIENTS
- Strawberries are an excellent source of a powerful antioxidant called lycopene!
- Bananas have essential nutrients like potassium, vitamin B 6 and even vitamin C! Did you know that vitamin C also behaves like an antioxidant in your body helping limit disease?!
- Beetroot powder is an excellent source of nutrients like folate, manganese, potassium, iron, and vitamin C!
- Chia seeds are one of my favorite super foods. They are an excellent source of healthy fats and fiber.
- Raspberries, like strawberries are high in antioxidant. Plus they're so delicious!
- Manuka honey is much better than conventional honey! It contains powerful compounds that can even help to repair wounds!
TIPS FOR MAKING THE BEST STRAWBERRY BANANA SMOOTHIE PARFAIT
MAKE THE CHIA PUDDING FIRST. Make your chia pudding before the smoothie so the chia seeds have time to gel.
USE FROZEN FRUIT FOR YOUR SMOOTHIE. Use only frozen fruit in your smoothie if you want it super thick. Fresh fruit in smoothies will not give you a thick frozen creamy texture.
BLEND YOUR SMOOTHIE COMPLETELY. Keep blending and scraping down the sides of your blender until all the fruit is pureed.
EAT IT IN A BOWL. This picture was taken for looks! I love to see how high my thick smoothies will pile! But, I always dump my smoothie parfaits into a bowl to eat them. 🙂
MAKE MY STRAWBERRY BANANA SMOOTHIE PARFAIT WITH CHIA PUDDING
INGREDIENTS YOU NEED
- 2 tablespoons chia seeds
- ½ cup flax milk with protein
- 1 tablespoon honey (optional)
- ½ cup frozen strawberries
- 1 frozen banana
- 3 teaspoons beetroot powder
- ½ cup fresh strawberries, sliced
- ½ cup fresh raspberries
EQUIPMENT YOU NEED
- High powered blender
- Serving bowl
STEP 1: MAKE THE CHIA SEED PUDDING
Start by making the chia pudding. I make the chia pudding and then stir it a few times every couple of minutes as I'm preparing the rest of the smoothie. It will start to gel (thicken) as you let it sit.
Another option is to make the chia pudding the night before so that it has time to gel overnight.
STEP 2: PREPARE THE FRESH FRUIT
Next, rinse and chop up your fresh fruit.
Did you know that raspberries have SUPER delicate skin. So, they should not be rinsed until right before they are eaten. If you rinse them ahead of time you will most likely end up with mushy raspberries.
Add those fresh fruits on top of the chia pudding.
You can also make this in a bowl but I like making it in jars to show how gorgeous all the layers are!
STEP 3: MAKE THE THICK SMOOTHIE
Finally add the frozen fruits and beetroot powder into your blender or food processor. You will probably have to turn it off and stir it a few times depending on how strong your blender is.
Or, let the fruit thaw slightly before blending. I find that this helps a lot!!
Pile your thick strawberry banana smoothie on top of your fresh fruit.

HOW TO MAKE A CHIA SEED STRAWBERRY BANANA SMOOTHIE:
Make the chia pudding as described above, then add it to your blender along with the fresh fruit, the frozen fruit and milk of choice. Blend until completely smooth. Pour into a large glass and enjoy!

Frequently asked questions about my strawberry banana smoothie parfait jar.
CAN I PUT RAW CHIA SEEDS IN MY SMOOTHIE?
Yes! You can blend in raw chia seeds, however chia seeds absorb a lot of water and you will have to add about ¼-1/2 cup extra water per tablespoon of chia seeds that you add.
SHOULD I SOAK CHIA SEEDS BEFORE ADDING TO MY SMOOTHIE?
Yes! I would recommend soaking them first because soaked chia seeds interact with your gut better, which means you absorb the maximum amount of nutrients.
CAN I MAKE THIS WITHOUT THE CHIA PUDDING?
Yes! You can make my strawberry smoothie parfait without chia pudding. I like to add the chia pudding so that there is more fiber and protein and it makes a complete breakfast.

For the chia pudding:
- 2 tablespoon chia seeds
- ½ cup flax milk with protein
- 1 tablespoon honey or maple syrup optional for sweetness (low FODMAP use maple syrup)
For the thick strawberry smoothie:
- ½ cup frozen strawberries
- 1 frozen banana
- 3 teaspoon beetroot powder optional for a darker red color & more nutrients
Extras/toppings:
- ½ cup fresh strawberries, sliced
- ½ cup fresh raspberries
Instructions
How to make the strawberry banana smoothie parfait (as pictured):
- Whisk the chia seeds with the flax milk and sweetener. Allow to sit for ~15 minutes to gel. Or, make it the night before and store it in the fridge. Pour the chia pudding into your jar or glass.
- Top the chia pudding with the fresh strawberries and raspberries.
- Add the frozen strawberries, frozen banana, and beet root powder to a blender. Pulse until it is smooth and creamy. You may have to turn it off a few times to stir it.
- Add the smoothie on top of the fruit. Enjoy! (You can also put all of this in a bowl- it is just as tasty this way.. and probably less messy!)
