Almond Pulp Banana Bread

If you make a lot of almond milk, chances are you've been looking for easy ways to use up your almond pulp. My almond pulp banana bread is a super quick and healthy way to use up that leftover almond pulp! Made in one bowl, my almond pulp bread recipe will be done in under 1 hour!

Equipment

Ingredients
  

Dry ingredients:

  • ¾ cup flour use gluten free, white wheat, whole wheat or all purpse
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon sea salt
  • ½ tsp baking soda
  • 1 teaspoon baking powder

Wet ingredients:

  • 2 ripe bananas, mashed
  • 1 lg egg
  • 1 cup almond pulp
  • ¼ cup honey, maple syrup, or agave
  • 1 teaspoon pure vanilla extract
  • ½ cup chopped walnuts

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Sift together dry ingredients in a bowl.
  • Form a well in the center of the dry ingredients. Add the wet ingredients to the center.
  • Mix until just combined. Fold in walnuts.
  • Spread batter into a parchment paper lined loaf pan. Bake for 30 minutes or until a toothpick comes out clean.
  • Cool, slice and enjoy!
