Blue Spirulina Pancakes

These are so fun to make on a slow weekend morning! Made with oat flour to add more nutritional value. The blue color comes from blue spirulina!

Equipment

  • blender, food processor or coffee grinder
  • Frying pan

Ingredients
  

  • 1.5 cups oat flour sub all-purpose, gluten free, or white wheat with a 1:1 ratio
  • 3.5 teaspoon baking powder
  • 1 teaspoon pink sea salt
  • ½ mashed banana
  • 1 egg vegan sub 1 flax egg
  • 1 cup soy milk low FODMAP sub almond milk
  • 3 tablespoon melted coconut oil + extra for frying pancakes
  • 1-4 teaspoon blue spirulina
  • Optional toppings:
  • Plant based yogurt
  • Blueberries
  • Pb protein bar
  • Coconut chips

Instructions
 

  • In a medium bowl, combine the oat flour, baking powder, sea salt.
  • In a separate bowl mash the banana. Add the egg, milk, and the melted coconut oil. Stir to combine.
  • Mix the wet ingredients into the dry ingredients.
  • Heat a frying pan over medium heat with ~1 teaspoon of oil.
  • Add a scoop of the pancake to the center. (I use ¼ measuring cup***)
  • Flip the pancake when the surface bubbles have popped. Cook until golden brown on the other side.
  • Top with your favorite toppings!

Notes

*If you don’t have oat flour, it is so easy to make your own (and cheaper) at home. You just put whole oats into a blender, food processor or coffee grinder and process till you get a flour like texture.
** I used pop joy blue spirulina. You can find this one on my amazon shop page in foods
***¼ cup makes small pancakes, if you like larger ones, try using ½ cup scoop or larger! Just make sure you use a bigger spatula!
