Blue Galaxy Donuts Gluten Free Vegan

Blue galaxy donuts for an out of this world treat! My galaxy donuts are made with a fun and easy blue marbled glaze. Gluten free and vegan! I included healthy galaxy donut ingredient options like oat flour, unrefined oil, natural food dye, and less refined sugars.

For the baked vanilla bean donut batter:

For the blue marble glaze

  • 1 cup raw cane powdered sugar
  • 4 tablespoon vanilla soy milk
  • Natural Blue food Dye made from blue spirulina

Instructions
 

  • Preheat oven to 350 and grease the doughnut holes
  • In a small bowl, combine the oat flour, sugar, baking powder, and sea salt. Set aside.
  • In a separate bowl combine the coconut oil, egg, milk, and vanilla extract.
  • Fold the dry ingredients into the wet ingredients until just combined.
  • Divide evenly between the 6 doughnut holes.
  • Bake for 8-10 minutes or until toothpick comes out clean.
  • Combine the powdered sugar, milk, and blue spirulina and dip each doughnut once they have cooled.
  • Store at room temperature up to a week.

Notes

How to make vegan blue galaxy donuts: simply substitute 1 egg for 1 flax egg.
To make 1 flax egg: mix together one tablespoon ground flaxseed with three tablespoons of water. Mix together, and let sit for 15 minutes to set and thicken.
