Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 over-ripe bananas, mashed
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 lg. egg vegan use 1 flax egg
  • ¼ cup avocado oil
  • 2 teaspoon vanilla extract
  • ½ cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line 12 muffin tins with muffin papers. Set aside.
  • In a medium sized bow, sift together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, mash the bananas. Add the sugar, egg, avocado oil, and vanilla extract. Stir to fully combine.
  • Fold the dry ingredients into the wet ingredients along with the chocolate chips until just combined.
  • Divide the batter evenly between the 12 muffin tins.
  • Bake for 25 minutes, rotating the pans once half way to ensure even baking. They are done when a toothpick comes out clean. Enjoy!
