These red white and blue popsicles are a perfect summer treat to bring out on memorial day or 4th of july! Plus, they're totally healthy!

Ingredients
  

Blue layer:

  • 1 cup blueberry kefir or vanilla with extra blue spirulina
  • 1 teaspoon blue spirulina

Red layer:

  • 1 cup strawberry kefir
  • 3 teaspoon beet root powder or pink pitaya powder (sweeter flavor)

White layer:

  • 1 cup vanilla kefir

Instructions
 

  • Start with the blue layer: mix 1 cup of vanilla kefir with 1 teaspoon of blue spirulina. Pour evenly between the 10 popsicle molds.
  • For the red layer, mix the strawberry kefir with the beet root powder. Make sure there are no bits of beet root powder left over. Pour gently over the blue layer.
  • Last, gently pour the vanilla kefir over the red layer.
  • Freeze for at least 3 hours, but preferably overnight!

Notes

I split the white layer half on top of the blue, and the other half at the end, I thought that a little white in the blue made it more of an American flag with the white stars in the blue!
