Start with the blue layer: mix 1 cup of vanilla kefir with 1 teaspoon of blue spirulina. Pour evenly between the 10 popsicle molds.
For the red layer, mix the strawberry kefir with the beet root powder. Make sure there are no bits of beet root powder left over. Pour gently over the blue layer.
Last, gently pour the vanilla kefir over the red layer.
Freeze for at least 3 hours, but preferably overnight!
