Almond Pulp Brownie Balls

Delicious decadent and totally healthy almond pulp brownie balls! My healthy no bake brownie balls are made with leftover almond pulp, and sweetened naturally with dates. My chocolate almond pulp brownie balls make the most delicious quick treat.

  • Add all ingredients to a food processor or high powered blender.
    1 cup almond pulp, ½ cup almond flour, ½ cup pitted dates, ⅓ cup cacao powder, ¼ cup hemp seeds, ¼ cup maple syrup, 2 tablespoon creamy cashew butter, ½ teaspoon pink sea salt, ¼ cup extra cacao powder for rolling

  • Pulse until it is completely combined and smooth. Scoop brownie balls by ~⅛ cup and roll into balls.
  • Roll in cacao powder if you like it to taste more like dark chocolate.

  • Store in an air tight container in the fridge for up to a week. Enjoy!

Notes

If you are using a blender instead of a food processor, you may need to scrape it down a couple of times depending on how strong your blender is. 
HOW TO MAKE ALMOND PULP ENERGY BALLS WITHOUT DATES- replace ½ cup of pitted dates with either ¼ cup pure maple syrup or honey.
