Almond Flour Chocolate Chip Cookies Dairy Free

These almond flour chocolate chip cookies are chewy, sweet, and delicious. They are everything you want in a classic chocolate chip cookie without all the extra white flour and sugars. I made these with almond flour, dark brown sugar, and coconut oil!

  • Preheat oven to 350 degrees Fahrenheit, place the rack in the center of the oven, and line a cookie sheet with parchment paper.
  • In a medium sized mixing bowl, cream the ⅔ cup softened coconut oil and ¾ cup brown sugar. Beat in the 1 egg and 2 teaspoons vanilla extract.
  • In a separate bowl, sift together the 2 ¾ cups super fine almond flour, ½ teaspoon baking soda, and ½ teaspoon sea salt.
    Fold the dry ingredients into the wet ingredients and mix until combined.
    Fold in the ¾ cup dark chocolate chips.
  • Roll the cookie dough into balls and flatten slightly in the palm of your hand.
    Place on the prepared cookie sheet, leaving approximately 1.5 inches between each cookie to allow room for spreading.
    Bake for 11-12 minutes or until just golden brown. Do not overbake, they will finish baking & firm up after you take them out of the oven.
    Leave the cookies on the tray for at least 5 minutes to finish baking & cool slightly.
    Transfer the cookies to a cooling rack to finish cooling.
