  • In a mixing bowl, whisk together the 3 large eggs, 2 tablespoons avocado oil, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Add the ¼ cup coconut flour, 1 teaspoon baking powder, and a pinch of sea salt. Whisk well to combine and no lumps remain.
  • Divide the pancake batter evenly between 2 mixing bowls.
  • Add beet root powder to 1 mixing bowl, and moringa powder to another mixing bowl and whisk well so that the powders are fully incorporated.
    Use a funnel to pour the pancake batter into a squeeze bottle.

  • Heat a medium sized frying pan with oil over medium to low heat.
    Use squeeze bottle to squeeze small pancakes onto the hot pan.
    Flip once bubbles form across the top of the mini pancakes and lightly brown the other side.
