These pink pitaya pancakes are such a fun pancake recipe. My pink pancakes are made with healthy ingredients like oat flour and pink pitaya powder. Just a few basic ingredients needed for these dye free pink pancakes!
In a mixing bowl, sift together 1 ½ cups oat flour, 3 ½ teaspoons baking powder, and 1 teaspoon salt.
Form a well in the center of the dry ingredients.Add ½ mashed banana, 1 egg, 1 cup milk, and 3 tablespoons oil.Mix well to combine.
Whisk in pink pitaya powder 1 teaspoon at a time to the desired color.
Heat a frying pan over medium heat. Drop pancake batter by ¼ cup scoops. Cook until bubbles form across the top. Flip and cook the other side until golden brown. Enjoy!
