Ingredients for the Sfiha Dough

  • 3 cups flour all-purpose, white wheat, whole wheat, or 1:1 gluten free flour
  • 1 teaspoon pink sea salt
  • 1 ¼ cups room temperature water

Ingredients for the Sfiha Meat Topping

  • 1 pound ground beef or ground lamb
  • 2 lg yellow onions, chopped
  • ½ cup fresh tomatoes, chopped approximately 1 vine tomato
  • ¼ cup fresh parsley
  • 1 tablespoon red pepper paste or tomato paste
  • 2 teaspoon pink sea salt
  • 1 teaspoon fresh cracked black pepper
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon vinegar
  • 2 tablespoon water

  • Pine nuts
  • Fresh parsley

Instructions
 

How to make the sfiha dough

  • In the bowl of a standing mixer add the 3 cups of flour, 1 teaspoon of sea salt, and 1 ¼ cups of room temperature water.

  • Keep your mixer running on low until the dough comes together into a ball. Add extra flour if dough is sticking to your hands.
  • Remove the dough from the mixing bowl. Use your hands to smooth any large cracks from the surface of the dough.
  • Cut dough into 10 equal sized pieces. Roll each piece into a ball.
  • Cover balls of dough with a towel. Rest dough on the counter while you make the meat topping.

How to make the sfiha topping

  • In a food processor, add 1 pound of ground beef.
    Next, add the 2 chopped yellow onions. Pulse the food processor to work the onions into the ground beef.

  • Add the remaining ingredients to your food processor: ½ cup fresh tomatoes, ¼ cup fresh parsley, 2 tablespoons red pepper paste, 2 teaspoons sea salt, 1 teaspoon black pepper, 1 teaspoon ground paprika, 1 teaspoon ground cumin, 1 tablespoon vinegar, and 2 tablespoons water.
    ½ cup fresh tomatoes, chopped, ¼ cup fresh parsley, 1 tablespoon red pepper paste or tomato paste, 2 teaspoon pink sea salt, 1 teaspoon fresh cracked black pepper, 1 teaspoon ground paprika, 1 teaspoon ground cumin, 1 tablespoon vinegar, 2 tablespoon water
  • Food process until totally pureed and there are no chunks of onions left.

How to roll and top sfiha

  • Preheat the oven to 450 degrees while you roll the dough. Line a couple of large baking trays with parchment paper.
  • Using a rolling pin, roll each ball of dough very thin on a floured countertop. Alternatively, you can roll the dough thick if you like chewy sfiha.
  • Transfer the dough to a parchment paper lined baking tray.
    Spread about ⅓ cup of spiced meat mixture onto the dough. Spread the meat out to the very edges with your fingers. Next, use your fingers to create a little space between the meat so that the air can circulate in the oven and not make your dough soggy.
  • Sprinkle the sfiha with pine nuts.

  • Bake at 450 degrees for 7-8 minutes or until the edges are golden brown.

How to serve sfiha

  • Cool slightly on a wire rack and then serve topped with fresh chopped parsley.
