Healthy Sourdough Banana Bread (Vegan too)!

Ingredients
  

Wet ingredients:

  • 3 lg extra ripe bananas
  • ¾ cup sourdough starter
  • ½ cup avocado oil
  • cup pure maple syrup sub honey
  • 2 lg eggs or flax seed egg see notes on how to make a flax egg
  • 1 teaspoon pure vanilla extract

Dry ingredients:

  • 2 cups all-purpose flour, unbleached sub half whole wheat or white wheat flour
  • ½ teaspoon baking soda
  • 1 teaspoon pink sea salt
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit and place the oven rack in the center position. Line a bread loaf pan with parchment paper and set aside.
    In a medium sized mixing bowl, add 3 very ripe bananas. (Yes you can use frozen then thawed bananas!)
    Mash the bananas very well.

  • Add the rest of the wet ingredients.
    ¾ cup sourdough starter, ½ cup avocado oil, ⅓ cup pure maple syrup, 2 lg eggs or flax seed egg, 1 teaspoon pure vanilla extract
  • Use a whisk to puree the wet ingredients completely.
  • Add the dry ingredients on top of your mixed wet ingredients.
    2 cups all-purpose flour, unbleached, ½ teaspoon baking soda, 1 teaspoon pink sea salt
  • Use a spatula to fold the flour in till just combined. Do not over mix your batter or your banana bread will not come out fluffy.
    Add the chocolate chips and gently fold in.

  • Spread the sourdough banana bread into the prepared bread loaf pan.
    Bake in your preheated oven for 55-60 minutes or until a toothpick comes out clean.
  • Cool completely on a wire rack before slicing and serving.

HOW TO MAKE A FLAX EGG: All you have to do is mix together 1 tablespoon ground (not whole) flaxseeds and 3 tablespoons of water. Since this recipe calls for 2 eggs, use 2 tablespoons of ground flaxseeds and 6 tablespoons of water. Whisk with a fork then let rest for 15 minutes to thicken before using in your banana bread.
