Cloud Smoothie Copycat (Tiktok cloud smoothie)

Coconut cloud smoothie! My version of the famous Erewhon Market cloud smoothie! It is made with a coconut whipped cream base, swirled with blue spirulina, a gorgeous health blue smoothie, and topped with more coconut whip! Don't miss out on this delicious cloud smoothie that is the perfect way to start off your summer season healthy!

Ingredients
  

For the coconut whipped cream

  • ¼ cup full fat coconut milk, chilled overnight

For the "cloud" swirl

For the blue smoothie

  • ½ cup vanilla soy milk
  • ½ frozen banana
  • ½ cup frozen pineapple
  • 1 tablespoon mixed nut butter or almond butter
  • 1 scoop coconut collagen or regular collagen
  • ½ teaspoon blue spirulina

Instructions
 

  • Place a can of full fat coconut milk in the fridge overnight.
    The next day, scoop the hardened portion of the can of coconut milk into a small bowl. Reserve the liquid portion for another recipe, or use in place of the soy milk in this recipe!

MAKE COCONUT WHIP & SWIRL IN THE BLUE SPIRULINA

  • Use a whisk or beaters to beat the coconut cream until it is fluffy.
    Scoop about 2 tablespoons of the whipped coconut cream to the bottom of a glass.
    Sprinkle ½ teaspoon blue spirulina across the coconut cream. Use a spoon to swirl the blue spirulina against the outside of your glass. Set your glass aside as we make the blue smoothie next.

MAKE THE BLUE SMOOTHIE

  • Next, add all ingredients to a blender: ½ cup vanilla soy milk, ½ frozen banana, ½ cup frozen pineapple, 1 tablespoon mixed nut butter, 1 scoop coconut collagen, and ½ teaspoon blue spirulina.
    Blend until completely smooth.
    Pour blue smoothie over top the coconut cream.

TOP WITH MORE COCONUT WHIP

  • Top your blue smoothie with 1-2 tablespoons more coconut whipped cream. Garnish with a little sprinkle of blue spirulina.
