Dairy Free Banana Oat Muffins with Chocolate Chips
These healthy dairy free banana oat muffins are a great recipe to make for an on the go breakfast. Made with healthy ingredients like whole wheat flour, rolled oats, and avocado oil.
¼cupvanilla soy milk (unsweetened, organic)sub any kind of milk
3ripe bananas, mashed
½cuppure maple syrup
½cupdark chocolate chipsdairy free use vegan dark chocolate chips
Instructions
Preheat oven to 375 degrees Fahrenheit. Line 12 muffin tins with muffin papers.
In a medium sized mixing bowl, sift together the flour, rolled oats, baking powder, baking soda, and salt. Set aside.
In a separate bowl, mash the bananas. Add the eggs, avocado oil, milk, and maple syrup.
Fold the dry ingredients into the wet ingredients until just combined. Fold in the optional chocolate chips.
Divide the batter evenly between the 12 muffin tins.
Bake for 16-18 minutes or until a toothpick comes out clean.
Cool on a wire rack and store loosely covered for up to 3 days at room temperature.
