  • 1 ½ cup whole wheat flour
  • 1 cup rolled oats
  • 1 ½ teaspoon baking powder (aluminum free)
  • ½ teaspoon baking soda
  • ½ teaspoon pink sea salt
  • 2 eggs vegan sub 2 flax eggs
  • ¼ cup pure avocado oil
  • ¼ cup vanilla soy milk (unsweetened, organic) sub any kind of milk
  • 3 ripe bananas, mashed
  • ½ cup pure maple syrup
  • ½ cup dark chocolate chips dairy free use vegan dark chocolate chips

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit. Line 12 muffin tins with muffin papers.
  • In a medium sized mixing bowl, sift together the flour, rolled oats, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, mash the bananas. Add the eggs, avocado oil, milk, and maple syrup.
  • Fold the dry ingredients into the wet ingredients until just combined. Fold in the optional chocolate chips.
  • Divide the batter evenly between the 12 muffin tins.
  • Bake for 16-18 minutes or until a toothpick comes out clean.
  • Cool on a wire rack and store loosely covered for up to 3 days at room temperature.

I like to use vanilla soy milk. But, you can really use any type of milk that you like in these! If you don't have avocado oil, you can substitute melted coconut oil.
