  • Preheat the oven to 375 degrees Fahrenheit and line 12 muffin tins with muffin papers. Set aside.
  • In a small glass dish, whisk together ½ cup almond milk and 1 tablespoon apple cider vinegar. Set aside.
  • In a medium sized bowl sift together the dry ingredients: 1 cup whole wheat flour, rolled oats, 1 teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, 1 teaspoon ground cinnamon, ¼ teaspoon ground cardamom, and ⅛ teaspoon ground ginger.
  • Form a well in the center of the dry ingredients and add the wet ingredients: almond milk + apple cider vinegar mixture, 2 tablespoons coconut oil, 1 egg, ½ cup honey, and 1 teaspoon vanilla extract. Mix until just combined.
  • Chop 3 apples. Fold the apples into the muffin batter.
  • Divide the batter evenly between the 12 prepared muffin cups.
  • Bake for 18-20 minutes in the preheated oven or until a toothpick inserted into the center comes out clean.
  • Cool on a wire rack.
  • Store covered at room temperature for up to 3 days.
