Healthy Peanut Butter Buckeyes without Powdered Sugar

Healthy peanut butter buckeyes are made with just 6 ingredients: peanut butter, coconut flour, sea salt, maple syrup, vanilla extract, and 70% dark chocolate. My healthy peanut butter buckeye recipe is also gluten free, dairy free, and vegan! No bake and delicious.

Ingredients
  

  • 1 cup creamy unsalted peanut butter sub almond butter or cashew butter
  • ¼ cup coconut flour
  • teaspoon super fine sea salt
  • 2-3 tablespoon maple syrup depending on how sweet you want them
  • 1 teaspoon pure vanilla extract
  • 3.5 oz 70% dark chocolate, melted vegans use vegan dark chocolate

Instructions
 

  • In a mixing bowl, combine all the ingredients except for the dark chocolate: 1 cup creamy peanut butter, ¼ cup coconut flour, ⅛ teaspoon sea salt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract.
    Mix well to combine.
    Allow the batter to rest for ~15 minutes to allow the coconut flour to soak up all the liquid.

  • Roll into about 14 equal sized balls and place on a parchment paper or non-stick cooking mat lined cookie sheet.
    Place the balls in the fridge for 1 hour.
    Chilling them before dipping them in chocolate helps the chocolate stick to the balls and harden faster.

  • Dip in melted dark chocolate and place back on the cookie sheet.
    Chill again in the fridge on the cookie sheet.

Notes

NOTE: you aren't likely to use all 3.5 oz of the dark chocolate, but this much is needed so there is enough in the dish for you to dip the peanut butter balls in.
HOW TO STORE BUCKEYE BALLS- Store for up to a week in an airtight container in the fridge.
HOW TO MAKE BUCKEYES WITHOUT PEANUT BUTTER- If you want to make healthy buckeye balls with no peanut butter, simply replace the 1 cup peanut butter with either 1 cup cashew butter or 1 cup almond butter. Any nut or seed butter will work as a replacement in this recipe!
