Healthy Fudgy Brownies!

These are the best healthy brownies you'll ever make! I made my easy healthy brownie recipe with good for you ingredients like sweet potato, 100% pure dark chocolate, almond butter, and more! These brownies are so fudgy and decadent and can be made in under 1 hour in 1 bowl!

  • ½ cup dark chocolate chips
  • ½ cup chopped pecans or walnuts

How to make healthy brownies in 1 bowl:

  • Preheat your oven to 350 degrees and line a baking dish with parchment paper.
    If you have not baked your sweet potato yet, see notes below.
    Add 1 cup of cooled sweet potato to a bowl, mash until sweet potato is smooth.

  • In a small heatproof bowl, melt the 2 ounces of baking chocolate with the nut butter in the microwave, stir every 30 seconds to prevent burning. Allow to cool.

  • Add the melted chocolate and almond butter mixture to your mashed sweet potatoes. Stir in very well.
  • Add the rest of your ingredients to the bowl.
    ¼ cup pure maple syrup, 1 egg, 1 egg yolk, 1 teaspoon pure vanilla extract, ⅓ cup cacao powder, 1 tablespoon coconut flour, ½ teaspoon baking soda, ⅛ teaspoon pink salt

  • Stir very well until your healthy brownie batter is totally smooth. Fold in dark chocolate chips or any chopped nuts if you're using them.
  • Spread batter into prepared baking pan. Bake brownies for 20-25 minutes. Do not overbake or your brownies will dry out.
  • Allow to cool and enjoy!

HOW TO BAKE A SWEET POTATO FOR YOUR BROWNIES- wrap a whole sweet potato in parchment paper. Bake in a 350 degree oven for about 45 minutes or until soft. Remove the sweet potato from the parchment paper and cut a slit in the skin to let the steam escape and help your sweet potato cool faster. Mash and use as much as you need!
HOW TO MAKE HEALTHY BROWNIES IN YOUR BLENDER- if you want to make healthy blender brownies, simply add all ingredients to your blender, except for the chocolate chips. Blend until the batter is very smooth. Scoop into the prepared square baking dish. Fold in any toppings like chocolate chips or nuts. Bake and enjoy!
HOW TO MAKE HEALTHY BROWNIE BITES - divide healthy brownie batter evenly between 12 mini muffin tins. Bake for about 15 minutes or till a toothpick comes out with wet crumbs. Cool and enjoy!
