Line a baking sheet with parchment paper. Add 4 large purple sweet potatoes (washed and peeled) and a diced red onion. Drizzle with 2 teaspoons of melted coconut oil or avocado oil. Sprinkle with 1 teaspoon dried rosemary, 1 teaspoon ground coriander, ¼ teaspoon ground nutmeg, 1 teaspoon sea salt, and 1 teaspoon black pepper.
Roast in your oven at 350 for about 45 minutes- 1 hour or until the purple potatoes are very soft.
Transfer the roasted vegetables to a large pot along with 6 cups of bone broth. Use an immersion blender to puree completely.
