Gut Healthy Raspberry Chia Pudding!

Delicious indulgent and gut healing raspberry cheesecake chia seed pudding! My raspberry chia pudding recipe is super healthy and makes a great breakfast or snack. Made with creamy vanilla cheesecake chia pudding layered with Greek yogurt raspberry cheesecake.

For the Chia Seed Pudding:

For the raspberry Greek yogurt "cheesecake:"

  • ¼ cup raspberries
  • ¼ cup Greek yogurt
  • ½ tablespoon raw honey

Instructions
 

  • This recipe only makes 1 jar of chia pudding, so use as many jars as you like!
    In a bowl, mix together chia seeds, milk, vanilla, and honey.
    2 tablespoon chia seeds, ½ cup milk of choice, ½ teaspoon vanilla extract, 1 tablespoon raw honey

  • Mix the chia pudding at least 1 time per minute for the first 5 minutes to prevent chia seeds from lumping together.
    Then, let your chia seed pudding thicken even further for about 15 minutes before layering it in your jars.

  • In a small bowl add ¼ cup raspberries and mash them until they are pureed. If you don't like raspberry seeds, you can use a blender to puree them totally.
    Next, stir in ¼ cup yogurt and ½ tablespoon honey.
    Set this aside for layering your raspberry chia seed pudding jar!

  • Now the fun part, layering your raspberry cheesecake chia pudding jars!
    Add half the chia seed pudding to the bottom of a jar.
    Top with half the raspberry "cheesecake."
    Add the remaining chia seed pudding.
    Finally add the rest of the raspberry cheesecake.
    Top your jars with fresh raspberries and enjoy!
