The Best Red White and Blue Popsicles!

My healthy red white and blue popsicles are a perfect summer treat to bring out on memorial day or 4th of July! My red white & blue popsicle recipe is made with whole fruit, coconut water, yogurt, honey, and blue spirulina. So healthy you can give it to your kids and toddlers!

Ingredients
  

Blue layer:

  • 1 cup plain yogurt or kefir or vanilla with extra blue spirulina
  • 1-2 teaspoon blue spirulina
  • 2 tbsp honey

White layer:

  • 1 cup plain yogurt or kefir
  • 2 tablespoon honey

Red layer:

  • 1 cup red fruit of choice ex: cherries or strawberries
  • cup coconut water
  • 3 teaspoon beet root powder optional for a deeper red color

Instructions
 

  • Start by mixing together the ingredients for the blue layer. Alternatively you can mix the red layer first and end with the blue layer, like in my video below.
    Divide between 10 popsicle molds and place in the freezer until it is firming up but not totally frozen solid, about 1-2 hours.
    1-2 teaspoon blue spirulina, 2 tablespoon honey, 1 cup plain yogurt or kefir
  • For the white layer, mix the ingredients for the white layer together.
    Divide over top the blue layer. Add popsicle sticks and gently place back in the freezer. Be careful not to bump the popsicle sticks.

  • Last, blend together the fruit for the red layer. Pour over the white layer. Place in the freezer one last time to freeze until completely solid.
    1 cup red fruit of choice, ⅛ cup coconut water, 3 teaspoon beet root powder
  • Freeze for at least 3 hours, but preferably overnight!
    Thaw for 5-10 minutes to loosen the red white and blue popsicles. Place in an airtight bag and store in the freezer for up to 1 month!

Notes

I split the white layer half on top of the blue, and the other half at the end, I thought that a little white in the blue made it more of an American flag with the white stars in the blue!
Note: My original post used kefir as the red layer but I recently updated it to include some whole fruit. You can make the original one with all kefir or the updated one.
Red: 1 cup strawberry kefir + 1 teaspoon beet root powder
White: 1 cup plain kefir or vanilla kefir
Blue: 1 cup blueberry kefir + 1 teaspoon blue spirulina powder
