For the healthy magnum bar filling:

  • 300 grams dark chocolate (85% or more cacao)
  • 1 tablespoon coconut oil
  • ¼ cup chopped almonds

Instructions
 

  • In a glass dish, add 1 ½ cups raw cashews. Cover completely with water. Add a lid and place in your fridge to soak overnight.

  • The next day, drain the water from your 1 ½ cups cashews. Add them to a blender or food processor along with your other magnum bar filling ingredients.
    ½ cup pitted dates, ¼ cup almond butter, 2 cups full fat coconut milk

  • Blend until completely smooth and creamy. Pour the filling into 12 regular sized popsicle molds or 20 mini molds. The amount of homemade magnum ice cream bars you get may vary based on the popsicle molds you have.

  • Place your popsicle molds in the freezer. Make sure to freeze them until they are frozen solid. This will take about 4-8 hours.

  • In a microwave safe bowl, add the chocolate and coconut oil. Stir every 30 seconds until the chocolate is completely melted to prevent burning. This will only take about 60-90 seconds.

  • Pop the frozen magnum bars out of their molds and dip in the melted dark chocolate. Sprinkle with chopped almonds or any other kind of nut that you like.
