Delicious Persian Baked Pomegranate Chicken

Persian pomegranate chicken recipe. A delicious crispy juicy Middle Eastern Baked Chicken recipe that is so easy to make! Made with a 7 ingredient overnight pomegranate molasses marinade. You can serve this delicious Persian pomegranate molasses chicken with my fluffy Arabic yellow rice!

Equipment

Ingredients
  

  • 6-8 pieces of chicken (I used 3 chicken legs and 3 chicken thighs)
  • 2 tablespoon pomegranate molasses
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon ground turmeric powder
  • ½ teaspoon fresh cracked black pepper
  • 1 tablespoon tomato paste or red pepper paste
  • 1 small red or yellow onion, diced

Instructions
 

  • In a mixing bowl, mix together all the ingredients for the Persian pomegranate molasses chicken marinade until completely combined. You can alternatively blend this marinade together in a blender if you don't want onion pieces in your marinade.
    Rub the marinade all over the chicken. Marinate overnight for the best flavor.
    The next day, preheat your oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.
    Lay the marinated chicken flat on top of the parchment paper.
    Brush the chicken with extra pomegranate marinade.
    6-8 pieces of chicken, 2 tablespoon pomegranate molasses, 2 tablespoon extra virgin olive oil, 1 tablespoon sea salt, 1 teaspoon ground turmeric powder, ½ teaspoon fresh cracked black pepper, 1 tablespoon tomato paste, 1 small red or yellow onion, diced
    Pomegranate Chicken Marinade
  • Bake in the oven for 45 minutes
    Turn oven on broil after 45 minutes and broil the chicken for 5 minutes until nice and crispy on top.
    Serve with Arabic yellow rice.
