Dietitian Made Strawberry Chia Pudding with Coconut Milk!

Strawberry chia pudding is a delicious and healthy breakfast! Made with high fiber chia seeds and juicy strawberries, my healthy strawberry chia seed pudding is easy to make! This chia seed pudding recipe can also be made to be gluten free friendly and dairy free friendly.

Strawberry Chia Seed Pudding with Fresh Strawberries:

  • In a jar or bowl, whisk together the chia seeds, honey, vanilla extract, and milk. You may have to stir this a couple of times to make sure that it thickens properly with no lumps.
    Stir in fresh sliced strawberries.
    Cover and soak overnight in your fridge.
    3 tablespoon chia seeds, ½ tablespoon raw honey (optional), ½ teaspoon pure vanilla extract, 1 cup coconut milk, ½ cup fresh sliced strawberries

  • Top with strawberry yogurt and more fruit if desired.

Strawberry Chia Seed Pudding with Frozen Strawberries:

  • Add honey, vanilla, coconut milk, and frozen thawed strawberries to your blender.
    Blend until the strawberries are pureed into the coconut milk completely.
    ½ tablespoon raw honey, ½ teaspoon pure vanilla extract, ½ cup coconut milk, ½ cup frozen thawed strawberries
  • Add 3 tablespoons of chia seeds to a glass jar, pour the strawberry coconut milk puree on top.
    Mix at least 3 or 4 times until your chia pudding is thick. Add more chopped fresh strawberries if you'd like.
    Cover and store in the fridge overnight, up to 4 days.
    Enjoy!
