
Just because Valentine's day is over doesn't mean the pink food is going anywhere! This strawberry chia pudding parfait is a perfect breakfast at home or on the go! I love making a big batch of chia seed pudding to have as breakfast or a snack throughout the week. Chia seeds are filled with fiber, fats, antioxidants, and essential minerals for your body.
STRAWBERRY CHIA PUDDING INGREDIENTS
Chia seeds. I get a huge bag of chia seeds during my costco haul and then store them in the fridge to make chia pudding all the time! Nuts & seeds will keep much longer and keep those good fats intact when you store them in the fridge.
Raw honey. If you are making non-heated foods like chia pudding and iced lattes, raw honey is the way to go! (Since the fragile enzymes in raw honey can actually be destroyed by heat).
Vanilla extract. Make sure to buy pure vanilla extract, it will make so much difference in the flavor.
Milk. I like using either a vanilla soy milk or oat milk in most of my chia puddings since I am dairy sensitive. But, you can really use any type of milk that you like in this recipe dairy included!
Strawberry yogurt. I used a strawberry greek yogurt in this parfait. While I can't tolerate fresh milk products, my gut can handle fermented milk products like yogurt, kefir, and hard cheeses.
Strawberries. The fresh strawberries are a must in this recipe! They add so much juicy flavor that you'll be wanting seconds. I haven't tried it with frozen strawberries, but if you do just make sure to thaw them out first so the cold doesn't freeze the milk in your chia pudding!
HEALTH BENEFITS OF CHIA SEEDS
Chia seeds are amazing for your health and known as one of the healthiest foods on the planet! Chia seeds are an excellent source of healthy fats, fiber, calcium, manganese, magnesium, phosphorus, and zinc.
Fiber is super important not only to feed your good gut bacteria, but it also helps with hormonal balance by pulling extra estrogen out!
CAN YOU EAT CHIA SEEDS EVERY DAY?
While I always promote variety in the diet, chia seeds could absolutely be eaten every day if you like them that much! Just 1 oz of chia seeds has a whopping 9 grams of fat (the good kind), 10 grams of fiber, and 5 grams of protein! Keep in mind you need about 25 grams of fiber a day so that is almost half of the fiber you need in an entire day.
Other types of seeds you might like if you want to mix things up are flax seeds, hemp seeds, and pumpkin seeds.
TIPS FOR MAKING NON LUMPY CHIA PUDDING
I get asked so many times how to make chia seed pudding without lumps. It is super easy to do! It just takes a couple of extra minutes to stir it.
First, add your chia seeds and optional sweetener to a bowl. Next, add half the amount of milk you are using. Whisk the chia and the milk very well to combine with a fork. Let the chia seeds sit in the milk for about 2-3 minutes. Next, add the rest of the milk and whisk again very well. Wait another 2-3 minutes. Whisk again to fully combine. Your chia seed pudding should be starting to "gel" really well. Give your pudding one more stir before serving to make sure it's the consistency you like. If you want it a bit thinner, simply add a little more milk.
You can do this process and then store the pudding in the fridge overnight, or, you can serve it immediately.
Gelling is basically just a term that meals the chia seeds have interacted with the liquid and formed a gel around the outside of the seed. This is what allows them to take on that pudding like texture.
HOW TO MAKE A STRAWBERRY CHIA SEED PUDDING PARFAIT
This strawberry chia pudding is a super delicious breakfast. You can make chia pudding by itself or with yogurt and any kind of fruit. I used strawberries and soy milk in this chia pudding jar.
To make chia pudding parfait jar, prepare your chia pudding as above: whisk together 6 tablespoons chia seeds, 1 tablespoon raw honey, 1 teaspoon pure vanilla extract, and 1 cup of milk.
Allow time for your chia seeds to gel.
Add 1 cup of sliced strawberries to your gelled chia pudding and stir.
Next, divide the strawberry chia pudding between to bowls or jars. Top with more strawberries, strawberry yogurt, and any other fruit you like!

Ingredients
For the strawberry chia seed pudding:
- 6 tablespoon chia seeds
- 1 tablespoon raw honey (optional) low FODMAP and vegans sub maple syrup or omit sweetener
- 1 teaspoon pure vanilla extract
- 1 cup milk of choice
- 1 cup fresh sliced strawberries
Toppings:
- Fresh strawberries
- 1 cup Strawberry Greek yogurt, divided vegan dairy free use coconut milk yogurt
Instructions
- In a bowl, whisk together the 6 tablespoons chia seeds, 1 tablespoon honey, 1 teaspoon vanilla extract, and 1 cup of milk. You may have to stir this a couple of times to make sure that it thickens properly with no lumps.Stir in 1 cup of sliced strawberries.
- Divide the chia pudding between two bowls or jars.
- Top with Β½ cup strawberry yogurt each and more fruit. Enjoy!
