    Strawberry Chia Pudding Recipe! This is the best strawberry chia seed pudding recipe ever and comes together so quickly. My easy strawberry chia pudding is made with just 4 ingredients and soaked overnight for the most nutritional benefits.

    I love making strawberry chia pudding during strawberry season when strawberries are fresh juicy and sweet here in New York. But, since this is one of my favorite chia seed pudding recipes, I wanted to make it taste just as good out of season.. meaning I have a version that uses frozen strawberries too!

    Make my easy strawberry chia pudding when you know you have a busy week ahead and want an easy quick and healthy breakfast to grab and go. Sometimes I also prep strawberry chia pudding with yogurt for a high protein snack ready to go all week!

    Whatever way you make my strawberry chia seed pudding recipe, and whether you have it for breakfast, snack, or even dessert it is incredibly healthy for you!

    STRAWBERRY CHIA PUDDING INGREDIENTS

    I recently updated my healthy strawberry chia pudding recipe to make it 2 ways! Both ways are incredibly healthy, but one way uses blended strawberries, and the other way uses whole chopped strawberries. It all depends if you like fruit chunks in your chia pudding or not!

    Strawberry Chia Pudding with Fresh Strawberries:

    • 3 tablespoons Chia seeds. I get a huge bag of chia seeds during my Costco haul and then store them in the fridge to make chia pudding all the time! Nuts & seeds will keep much longer and keep those good fats intact when you store them in the fridge.
    • ½ tablespoon Raw honey. If you are making non-heated foods like chia pudding and iced lattes, raw honey is the way to go! (Since the fragile enzymes in raw honey can actually be destroyed by heat).
    • ½ teaspoon Vanilla extract. Make sure to buy pure vanilla extract, it will make so much difference in the flavor.
    • 1 cup Coconut Milk. I like using either coconut milk or flax seed milk in most of my chia puddings since I am dairy sensitive. But, you can really use any type of milk that you like in this recipe dairy included!
    • ½ cup Strawberries. The fresh strawberries are a must in this recipe! They add so much juicy flavor that you'll be wanting seconds.

    Strawberry Chia Seed Pudding with Frozen Strawberries:

    • 3 tablespoons Chia Seeds
    • ½ tablespoon Raw Honey
    • ½ teaspoon Vanilla Extract
    • ½ cup Coconut Milk
    • ½ cup Frozen Strawberries

    And if you want more protein in your chia pudding, which would make this strawberry chia pudding an excellent recipe for weight loss, scoop full fat Greek yogurt on top of your thickened chia pudding!

    IS STRAWBERRY CHIA PUDDING ACTUALLY GOOD FOR YOU?

    Yes! Overnight strawberry chia seed putting is excellent for your health! When soaked overnight, the chia seeds have time to soften, so that when you eat them the next day, you body can absorb more of the chia seed's nutrients.

    Strawberry Chia Seed Pudding Benefits:

    1. Gut Health. Chia seeds are extremely high in fiber, which supports the good gut bacteria and helps you digest and absorb food better. Also, this will help you poop!
    2. Skin Health. As a biproduct of good gut health, your skin will be glowing!
    3. Hormone Balance. Heal your gut and your hormones will be happier! Not only will my strawberry chia seed pudding help your hormones through gut health.. but it will also help absorb extra estrogen from your system.

    CAN YOU EAT CHIA SEEDS EVERY DAY?

    If you were wondering, is it OK to eat strawberry chia chia pudding every morning? The answer is yes! Absolutely!

    While I always promote variety in the diet, chia seeds could absolutely be eaten every day if you like them that much! Just 1 oz of chia seeds has a whopping 9 grams of fat (the good kind), 10 grams of fiber, and 5 grams of protein! Keep in mind you need about 25 grams of fiber a day so that is almost half of the fiber you need in an entire day.

    Other types of seeds you might like if you want to mix things up are flax seeds, hemp seeds, and pumpkin seeds.

    TIPS FOR MAKING NON LUMPY STRAWBERRY CHIA SEED PUDDING OVERNIGHT

    I get asked so many times how to make chia seed pudding without lumps. It is super easy to do! It just takes a couple of extra minutes to stir it.

    First, add your chia seeds and optional sweetener to a jar or bowl.

    Next, add half the amount of milk you are using. Whisk the chia and the milk very well to combine with a fork. Let the chia seeds sit in the milk for about 2-3 minutes.

    Next, add the rest of the milk and whisk again very well. Wait another 2-3 minutes. Whisk again to fully combine.

    Your chia seed pudding should be starting to "gel" really well. Give your pudding one more stir before serving to make sure it's the consistency you like. If you want it a bit thinner, simply add a little more milk.

    You can do this process and then store the pudding in the fridge overnight, or, you can serve it immediately.

    Gelling is basically just a term that meals the chia seeds have interacted with the liquid and formed a gel around the outside of the seed. This is what allows them to take on that pudding like texture.

    NOTE if your chia seeds are not absorbing the milk they probably have gone bad! Fresh chia seeds will start to soak up the milk as soon as you add it in which is why stirring so much is necessary!

    HOW TO MAKE MY EASY STRAWBERRY CHIA SEED PUDDING RECIPE

    You can make my strawberry chia seed pudding with yogurt or no yogurt, it is totally up to you! I layer my yogurt on top, so it is not actually necessary for making the chia seed pudding itself, but is great if you want to add more protein.

    STRAWBERRY CHIA PUDDING WITH FRESH STRAWBERRIES

    To make my original strawberry chia pudding with coconut milk and fresh strawberries, grab a glass jar and add:

    • 3 tablespoons Chia Seeds
    • ½ tablespoon Raw Honey
    • ½ teaspoon Vanilla Extract
    • 1 cup Coconut Milk

    Whisk together very well, at least 3 or 4 times. Pausing between mixing. Once your chia pudding is thick, you can add chopped fresh strawberries. Cover and let them soak overnight in the fridge.

    Enjoy!

    STRAWBERRY CHIA PUDDING WITH FROZEN STRAWBERRIES

    To make my other version of strawberry chia seed pudding with coconut milk and frozen strawberries, which is best made out of strawberry season, grab a blender first and add:

    • ½ tablespoon Raw Honey
    • ½ teaspoon Vanilla Extract
    • ½ cup Coconut Milk
    • ½ cup Frozen Strawberries (thawed completely)

    Blend until the strawberries are pureed into the coconut milk completely.

    Add 3 tablespoons of chia seeds to a glass jar, pour the strawberry coconut milk puree on top. Mix at least 3 or 4 times until your chia pudding is thick. Add more chopped fresh strawberries if you'd like.

    Cover and store in the fridge overnight, up to 4 days.

    MAKING STRAWBERRY CHIA PUDDING FOR BABIES & TODDLERS

    I've been making strawberry chia pudding for my 3 year old starting when she was just 6 months old! Strawberry chia pudding is and excellent and healthy choice for baby led weaning.

    As a registered dietitian, I love strawberry chia pudding for babies because babies don't eat a whole lot! And in those couple of bites, you want to be giving your baby as most nutrients as possible. Chia seeds are incredibly high in nutrients and so great for babies gut health.

    Is chia seed pudding good for babies? Yes! Chia seeds are excellent for babies and toddlers to get lots of nutrients in including protein, healthy fats, and fiber.

    Do you need to soak chia seeds before giving to baby? Yes! Soak chia seeds overnight before giving to baby. Also, start small and work your way up. Start with about ½ teaspoon chia seeds for baby and see how baby takes them, and how their poop is. You will see the chia seeds in the poop this is totally normal! Keep in mind more fiber means more water, so keep your baby hydrated!

    Strawberry Chia Seed Pudding with Fresh Strawberries:

    • 3 tablespoon chia seeds
    • ½ tablespoon raw honey (optional)
    • ½ teaspoon pure vanilla extract
    • 1 cup coconut milk or milk of choice
    • ½ cup fresh sliced strawberries

    Strawberry Chia Seed Pudding with Frozen Strawberries:

    • 3 tablespoon chia seeds
    • ½ tablespoon raw honey

    • ½ cup coconut milk or milk of choice
    • ½ cup frozen thawed strawberries

    Instructions
     

    Strawberry Chia Seed Pudding with Fresh Strawberries:

    • In a jar or bowl, whisk together the chia seeds, honey, vanilla extract, and milk. You may have to stir this a couple of times to make sure that it thickens properly with no lumps.
      Stir in fresh sliced strawberries.
      Cover and soak overnight in your fridge.
      3 tablespoon chia seeds, ½ tablespoon raw honey (optional), ½ teaspoon pure vanilla extract, 1 cup coconut milk, ½ cup fresh sliced strawberries
      How to Make Chia Pudding
    • Top with strawberry yogurt and more fruit if desired.

    • Add honey, vanilla, coconut milk, and frozen thawed strawberries to your blender.
      Blend until the strawberries are pureed into the coconut milk completely.
      ½ tablespoon raw honey, ½ teaspoon pure vanilla extract, ½ cup coconut milk, ½ cup frozen thawed strawberries
    • Add 3 tablespoons of chia seeds to a glass jar, pour the strawberry coconut milk puree on top.
      Mix at least 3 or 4 times until your chia pudding is thick. Add more chopped fresh strawberries if you'd like.
      Cover and store in the fridge overnight, up to 4 days.
