My pink pitaya chia pudding recipe is a super easy to make recipe! You can make my pink chia pudding two ways: with dragon fruit powder, or by blending dragon fruit whole. Either way, this chia pudding recipe is incredibly healthy for you!
Pink pitaya an pink dragon fruit are two names for the same thing, a delicious juicy pink fruit found mostly in south Asia, but can now be sometimes bought here in north America. I usually buy my pink dragon fruit frozen in chunks to ensure that is has the best flavor as frozen fruit is frozen at it's peak ripeness. If you can't find fresh or even frozen pink dragon fruit, you can find pink pitaya powder (dragon fruit powder) on line!

PINK DRAGON FRUIT CHIA PUDDING INGREDIENTS
For my pink pitaya, aka pink dragon fruit chia seed pudding you just need a few simple ingredients. I first made this pink chia pudding recipe with pink dragon fruit powder, and then updated it to include whole pink dragon fruit.
Make this pink dragon fruit chia pudding either way! I'm going to include measurements for both ways here.
Pink Dragon Fruit Chia Pudding Ingredients (with whole fruit)
- 3 tablespoons chia seeds
- ½ cup frozen or fresh pink dragon fruit chunks
- ½ cup coconut milk
- 1 tablespoon honey
- ½ cup vanilla Greek yogurt to top (optional)
Pink Pitaya Powder Chia Pudding Ingredients (with dried ground dragon fruit)
- 3 tablespoons chia seeds
- 1 teaspoon pink pitaya powder
- 1 cup coconut milk
- 1 tablespoon honey
- ½ cup vanilla Greek yogurt to top (optional)
BENEFITS OF PINK DRAGON FRUIT CHIA PUDDING
Pink pitaya chia pudding with chia seeds is super good for your health- namely, your gut health! Chia seeds have:
- Fiber (both soluble and insoluble!!)- Fiber is excellent for your gut health! It helps detoxify your body and expel toxins, extra estrogen, and extra cholesterol from your body.
- Antioxidants- Both chia seeds and pink dragon fruit contain antioxidants. Antioxidants basically fight the bad guys in your body and keep your immune system strong! Also excellent to keep your skin from aging too fast by combatting the toxins that would age your skin.
- Protein- Protein in my pink pitaya chia pudding recipe comes mainly from the chia seeds, but I also love top my chia pudding with Greek yogurt to have extra protein and put just one jar or pink chia pudding upwards of 20 grams of protein!
- Micronutrients- Micronutrients help everything in your body run smoothly. And when you eat whole foods, you body absorbs those little nutrients much better than from supplements! This healthy pink pitaya chia pudding has Iron, Calcium, Magnesium, Manganese, Phosphorus, and more!
These are just a few things that make pink pitaya chia pudding health, but the benefits go far beyond this! Gut health, hormone balance, and improved mood are an effect of adding fiber, antioxidants, enough protein, and micronutrients to your body.

HOW TO MAKE PINK DRAGON FRUIT CHIA PUDDING
There are two ways to make my pink dragon fruit chia pudding recipe: either by mixing chia seeds with pink dragon fruit powder. Or, by mixing chia seeds with dragon fruit puree. Both ways are delicious, easy, and incredibly healthy for you!
Pink dragon fruit chia pudding is an easy make ahead recipe! You can eat chia pudding for a healthy snack, a super healthy breakfast, or even a healthy dessert!
Also, when you make pink pitaya chia pudding overnight, the chia seeds have time to soak and soften, which makes nutrients more available to your body to absorb the next day.
My dragon fruit chia pudding recipe makes one serving, so to make it simple for you, just grab as many jars as you want to make ahead and use the exact measurements below for each jar! No math needed for this one!
METHOD 1: PINK PITAYA (DRAGON FRUIT)POWDER
Let's start with the pink dragon fruit powder method, which I first wrote this pink pitaya powder recipe for years ago.
Grab a mason jar, or a glass jar with an air tight fitting lid. Set the lid aside for now.
In each jar add:
- 3 tablespoons chia seeds
- 1 cup coconut milk or substitute any other kind of milk
- 1 tablespoon honey or maple syrup
- 1 teaspoon pink pitaya powder
Use a fork or small whisk to combine the chia seeds with the milk and powder.
Whisk the chia seeds with the milk and pink dragon fruit powder at least 3 times in the first 5 minutes to prevent clumping, pausing 1 minute between stirring.
You will notice that your pudding has become much thicker as the chia seeds have soaked up a lot of the liquid.
At this point, you can eat your chia pudding, or let it soak overnight for the most benefits. Top your dragon fruit chia pudding overnight with dragon fruit chunks and Greek yogurt to have a complete and filling meal in the morning!
METHOD 2: BLENDED WHOLE PINK DRAGON FRUIT
The next method uses whole pink dragon fruit instead of pink dragon fruit powder.
Grab a glass jar like above, or use as many jars as you want to meal prep ahead.
In each jar add:
- 3 tablespoons chia seeds
In a blender add:
- ½ cup pink dragon fruit chunks (fresh or frozen and thawed)
- ½ cup coconut milk
- 1 tablespoon honey or maple syrup
Blend until pureed completely, and then add to your jar with the chia seeds. Whisk well to combine the chia seeds into the pink dragon fruit puree.
Whisk the chia seeds with the dragon fruit and milk puree at least 3 times in the first 5 minutes to prevent clumping, pausing 1 minute between stirring.
Once your pink chia pudding is thick, add vanilla Greek yogurt on top and more pink dragon fruit chunks. Cover with a tight fitting lid.
Store in the fridge up to 3 days.
HOW TO STORE PINK DRAGON FRUIT CHIA PUDDING OVERNIGHT
Chia seeds can be stored for quite awhile when they are dry. But once you have introduced liquid to them, their shelf life quickly declines.
Store your chia seed pudding in an airtight container in the fridge for only up to 3 days!
Do chia seeds come from dragon fruit?
Although those tiny seeds in dragon fruit might look a lot like chia seeds, they are just dragon fruit seeds. Chia seeds actually come from a different plant called Salvia hispanica. Salvia hispanica is a member of the mint family!

- In a glass jar, add chia seeds, milk, honey/maple syrup, and pink dragon fruit powder. Whisk well to combine. Whisk the chia seeds with the milk and pink dragon fruit powder at least 3 times in the first 5 minutes to prevent clumping, pausing 1 minute between stirring.
- Add Greek yogurt and pink dragon fruit on top of your chia pudding if you like. Cover your container and store in the fridge for up to 3 days.
