Pink Dragon Fruit Chia Seed Pudding (Pink Pitaya)

Pink dragon fruit chia seed pudding! My easy and healthy pink chia pudding is colored a vibrant pink color with real pink dragon fruit! You can use either powdered pink dragon fruit, called pink pitaya powder. Or, you can blend whole pink dragon fruit with milk. Either way, this is an incredibly healthy recipe to meal prep for breakfast or even a healthy snack!

Instructions
 

Pink Pitaya Powder Chia Pudding Ingredients (with dried ground dragon fruit)

  • In a glass jar, add chia seeds, milk, honey/maple syrup, and pink dragon fruit powder.
    Whisk well to combine.
    Whisk the chia seeds with the milk and pink dragon fruit powder at least 3 times in the first 5 minutes to prevent clumping, pausing 1 minute between stirring.
  • Add Greek yogurt and pink dragon fruit on top of your chia pudding if you like.
    Cover your container and store in the fridge for up to 3 days.

  • In a glass jar, add the chia seeds.
  • Next, add the dragon fruit chunks, milk, and honey in a blender.
    Blend until pureed completely.
    Pour the puree over the chia seeds and whisk to combine.
    Whisk the chia seeds with the dragon fruit puree at least 3 times in the first 5 minutes to prevent clumping, pausing 1 minute between stirring.
  • Add Greek yogurt and pink dragon fruit on top of your chia pudding if you like.
    Cover your container and store in the fridge for up to 3 days.
