In a glass bowl or dish add 2 cups of raw cashews. Cover them completely with water and soak overnight in the fridge. You can soak cashews overnight on the counter if you live in a cooler climate.

The next day, drain the water from your cashews and add them to a high powered blender or food processor along with the other healthy ice cream ingredients:
8 over ripe frozen bananas, 1 teaspoon sea salt, 4 teaspoon pure vanilla extract
Blend until completely silky smooth.
Pour your blended banana and cashew ice cream into a parchment paper lined bread loaf pan.
Stir in cookie dough of choice. You can use a healthy cookie dough protein bar chopped up, like a laura bar. Or, you can make homemade cookie dough and stir it in.
