    Healthy Chickpea Cookie Dough. Healthy chickpea cookie dough is an easy to make summer treat with no oven required!

    My Healthy Chickpea Cookie Dough recipe is:

    • No-bake
    • Naturally sweetened
    • Gluten free
    • Dairy free
    • Vegan

    The weather has been HOT HOT HOT this week! Literally we went from 0 to 100... well maybe not that drastic but yesterday it was actually 90 degrees in New York in May.

    I absolutely love this kind of weather. I know yuck but the sticky hot humid weather is for me! But one thing I can not do is turn on the oven when it's so hot out. So I present no-bake healthy chickpea cookie dough!!

    HEALTHY CHICKPEACOOKIE DOUGH INGREDIENTS

    • chickpeas
    • maple syrup
    • creamy peanut butter
    • vanilla extract
    • salt
    • dark chocolate chips or chunks

    DOES CHICKPEA COOKIE DOUGH TASTE GOOD?

    Yes!! Chickpea cookie dough is surprisingly smooth and sweet. It tastes just like raw cookie dough, without all the gritty sugar in it!

    ARE CHICKPEAS GOOD FOR YOU?

    Yes! Chickpeas are excellent for your health. They are extremely high in fiber, which feeds your good gut bugs. Chickpeas are actually one of the best gut healthy foods you can eat because of how high they are in fiber.

    IS CHICKPEA COOKIE DOUGH BAD FOR IBS?

    If you have IBS, chickpeas are high on the list for trigger foods since they are high in FODMAPS.

    WATCH HOW I MADE MY HEALTHY CHICKPEA COOKIE DOUGH

    TIPS FOR MAKING THE BEST HEALTHY CHICKPEA COOKIE DOUGH

    USE STEAMED CHICKPEAS INSTEAD OF CANNED CHICKPEAS. A. they're cheaper, B. They haven't been sitting in a can for who knows how long, and C. they're softer than canned ones... giving you smoother cookie dough!

    FOOD PROCESS UNTIL COMPLETELY SMOOTH. Keep blending your dough until it is totally smooth and creamy. Scrape down the sides of your food processor as needed.

    CHILL YOUR CHICKPEA COOKIE DOUGH BEFORE STIRRING IN CHOCOLATE CHIPS. Your cookie dough might be pretty warm after all that food processing. Chill it in the fridge for 30 minutes before stirring in your chocolate chips to prevent them from melting.

    MAKE MY HEALTHY CHICKPEA COOKIE DOUGH

    INGREDIENTS NEEDED

    • Chickpeas
    • Maple Syrup
    • Peanut Butter
    • Vanilla Extract
    • Sea salt
    • Dark chocolate chips

    EQUIPMENT NEEDED

    • Food processor

    How to make healthy chickpea cookie dough in your food processor:

    Add the chickpeas, maple syrup, peanut butter, vanilla extract, and sea salt to a food processor.

    Don't add the chocolate chips yet! You will stir those in after you have blended everything together.

    Food process it for about 5-7 minutes. Don't turn it off too soon or it won't be super smooth and creamy.

    Next, take the blade out of the food processor.

    Fold in the chocolate chips.

    You will notice they will start to melt.. I love this!

    But, if you want the chocolate chips to stay totally intact, put your cookie dough in the fridge for about 30 minutes to cool it down before you stir in the chocolate chips.

    If it turns out too thin and you want to thicken it up a bit, you can stir in 1 tablespoon of coconut flour. Let the coconut flour sit for about 10 minutes to absorb the excess liquid.

    HOW TO MAKE CHICKPEA COOKIE DOUGH BALLS

    Roll the cookie dough into little bite sized pieces like this and put them on parchment paper:

    Freeze them.

    And stir them into my cookie dough smoothie bowl, cookie dough blizzard, or chocolate cookie dough blizzard!

    HOW TO STORE HEALTHY CHICKPEA COOKIE DOUGH

    Store healthy chickpea cookie dough in the fridge in an airtight container for up to 5 days.

    Or, store chickpea cookie dough rolled into balls in the freezer in parchment paper lined container for up to 3 months.

    ARE CHICKPEAS AND GARBANZO BEANS THE SAME THING?

    Yes! Chickpea and garbanzo bean are two names for the exact same bean.

    CAN I MAKE HEALTHY CHICKPEA COOKIE DOUGH WITHOUT PEANUT BUTTER?

    Yes! You can make my healthy chickpea cookie dough recipe without peanut butter. Simply replace the peanut butter with cashew butter.

    HOW DO I MAKE CHICKPEA COOKIE DOUGH WITHOUT A FOOD PROCESSOR?

    If you have a high powered blender, use that instead of a food processor. You might have to scrape down the sides a couple of times to make sure all the chickpeas get totally pureed.

    CAN I MAKE CHICKPEA COOKIE DOUGH WITH DATES INSTEAD OF MAPLE SYRUP?

    Yes! You can substitute the maple syrup for dates. Soak ΒΌ cup whole pitted dates in hot water for 30 minutes. Then, add them to your food processor in place of the maple syrup.

    Healthy Chickpea Cookie Dough

    This healthy chickpea cookie dough is going to blow your mind! It is totally health and super high in fiber from the chickpeas! A great healthy dessert or even a snack.

    Equipment

    • Food processor

    Ingredients
      

    • 1 cup steamed chickpeas
    • ΒΌ cup pure maple syrup or soaked dates
    • Β½ cup creamy peanut butter or creamy cashew butter
    • 2 teaspoon vanilla extract
    • Dash sea salt
    • Β½ cup dark chocolate chips vegan chocolate chips if vegan

    Instructions
     

    • Add all ingredients into a food processor except the chocolate chips. Turn on puree and let it run for ~5-7 minutes.
    • Remove the blade from the food processor and stir in the chocolate chips.
    • Enjoy!
    • This can be stored in an airtight container in the fridge for up to 5 days. Or, roll it into bite sized balls and store it in the freezer for up to a month in an airtight container.

      MMM cookie dough is the best but when it's made with fibrous chickpeas it's even better and I feel good eating a healthy dessert like this.
