I love making homemade almond milk and I was about to make my decadent almond pulp brownie balls recipe, but I realized I had not made an almond pulp cookie recipe yet! These almond pulp thumbprint cookies are so delicious and perfect for chocolate lovers!

ALMOND PULP COOKIES INGREDIENTS
My three ingredient almond pulp cookies were taken a step further and filled with delicious healthy date caramel and then dipped in melted dark chocolate!
the almond pulp cookie:
- dry almond pulp (you could also use almond flour if you want!)
- maple syrup (or honey)
- butter (or almond butter)
the date caramel:
- dates
- coconut cream
- vanilla extract
- pink sea salt
the dark chocolate shell:
- dark chocolate
- coconut oil
HOW LONG DOES ALMOND PULP LAST?
After extracting homemade almond milk, your almond pulp will last in the fridge, covered in an air tight container for about 3-4 days. If you do not plan to use up your almond pulp in those days, almond pulp can easily be stored in the freezer.
To store almond pulp in the freezer simply add it to an airtight freezer safe bag or container where it can last up to a year! Once you are ready to use it, thaw it to room temperature and then use a towel to absorb any excess moisture.
WHAT CAN YOU DO WITH ALMOND PULP?
There are so many ways to use almond pulp! Almond pulp can be added to smoothies and smoothie bowls for extra fiber and they can also be made into delicious treats like these:

- almond pulp crust chocolate cheesecake
- almond pulp reese's balls
- banana almond pulp muffins
- almond pulp brownie balls
HOW TO MAKE ALMOND PULP COOKIES
My healthy almond pulp cookies are so easy to make! Keep in mind that almond pulp needs to be totally dry before adding it to any mix! So use a towel to absorb any moisture before adding it to the mix.
STEP 1: MAKE THE VEGAN ALMOND PULP COOKIE BATTER
In a bowl, mix together your ingredients for your 3 ingredient almond pulp cookies:
- 2 cups very dry almond pulp (or 2 cups of almond flour)
- ¼ cup pure maple syrup (or ¼ cup honey, or ¼ cup date syrup)
- ¼ cup room temperature butter (or ¼ cup almond butter)
Mix the cookie ingredients together until completely combined then place in the fridge to chill for about 30 minutes. While the cookie dough chills, preheat your over to 350 degrees Fahrenheit.
STEP 2: ROLL ALMOND PULP THUMBPRINT COOKIES AND BAKE
After chilling the almond pulp cookie dough, remove from the fridge and roll into about 24 evenly sized balls. Keep in mind that almond pulp cookie dough can be a bit fragile. The smaller the cookie, the less cracked they will be when you add the thumbprint.
Place cookies on a large parchment paper lined baking sheet, leave about 1 ½ inches between cookies.
After rolling them into balls, press the center of each cookie to form a thumbprint. This is where you will add the date caramel filling. The cookies might crack when you add the thumbprint and that is okay! Just form them into circles again after you added the thumbprints.
Bake for about 15 minutes till golden brown and then cool on the sheet.
STEP 3: CHILL AND MAKE THE DATE CARAMEL
After your baked almond pulp cookies have cooled off, add them to a parchment paper lined plate and place them in the freezer. Freezing your almond pulp cookies helps them to stay in tact when you dip them in the melted chocolate and also helps the chocolate harden fast!
While the cookies are in the freezer make your date caramel which is so easy to make! All you have to do is add these 4 healthy caramel ingredients to a blender:
- ½ cup pitted dates (soaked in hot water for 30 minutes then drained)
- ½ cup coconut cream
- ½ teaspoon pure vanilla extract
- dash of sea salt
Blend date caramel ingredients until completely smooth.
STEP 4: CHILL AGAIN THEN DIP IN CHOCOLATE
Remove your almond pulp cookies from the freezer. Add a dollop of the date caramel to fill each thumbprint.
Place the caramel filled cookies back in the freezer until the date caramel is hard to the touch.
Once the date caramel is hard, melt ¾ cup dark chocolate chips and 1-2 tablespoons of coconut oil in the microwave.
Dip each cookie in the melted chocolate.
Place the dipped cookies back in the freezer to set the chocolate and enjoy!
ALMOND PULP COOKIE VARIATIONS
Here are some easy substitutions in my almond pulp cookies you can use if you don't have one of my ingredients:
- Almond flour for almond pulp
- Honey or date syrup for maple syrup
- Almond or peanut butter for butter
- Jam in place of date caramel

Yes! You can use egg in place of half of the butter.

WHAT IS COCONUT CREAM?
Coconut cream is simply the hard portion from full fat coconut milk. Buy any can of full fat coconut milk and use only the hard portion (not the watery part).
HOW DO I MAKE VEGAN ALMOND PULP COOKIES?
For vegan and dairy free almond pulp cookies, simply replace the butter with almond butter. All other ingredients in my almond pulp cookie recipe are already vegan and dairy free.
