    Hummus with Beetroot Powder (Pink Hummus). My beetroot hummus recipe with tahini is super easy to make and loaded with good for you healthy ingredients!

    Hummus has become one of my favorite things to eat! It is so easy to just pull out of the fridge with some pita bread for a quick snack. Unlike other quick snacks, it has so many health benefits! Try my healthy traditional hummus!

    WHAT IS PINK HUMMUS MADE OF?

    Pink beetroot powder hummus is made of steamed soft chickpeas, fresh lemon, tahini, olive oil, water, sea salt, ground cumin, and beetroot powder.

    IS HUMMUS HEALTHY?

    Yes!! Pink hummus is LOADED with healthy benefits. One of the top health benefits of hummus is its fiber content which is excellent for your gut health.

    BEETROOT POWDER HUMMUS HEALTH BENEFITS

    • Chickpeas are an excellent source of fiber! They are a hearty fiber that will feed the friendly bacteria in your gut! Plus, they have plant based proteins!
    • Lemons as we all know are very high in vitamin C! Vitamin C is needed for your immune system!
    • Tahini is made from ground up sesame seeds. This is a good source of healthy fats needed for skin integrity.
    • Olive oil is another healthy fat source! Long used by the Middle Easterner's to reap the health benefits.
    • And I added beetroot powder to give it an extra kick of color and antioxidants! Pretty and healthy!

    TIPS FOR MAKING THE BEST CREAMY HUMMUS WITH BEETROOT POWDER

    STEAM DRIED CHICKPEAS. Make your own chickpeas for hummus by pressure cooking dried chickpeas to soft steamed chickpeas.

    USE HIGH QUALITY INGREDIENTS. Tahini, olive oil, etc. All of these will make or break your hummus so make sure to purchase high quality ingredients.

    BLEND FOR A LONG TIME. It might seem like your blender or food processor is running forever, but keep blending your hummus until it is smooth, fluffy, and creamy.

    CAN I MAKE BEETROOT HUMMUS WITHOUT CHICKPEAS?

    Yes! Simply sub the chickpeas for soft white cannellini beans.

    HOW DO I MAKE BEETROOT HUMMUS WITHOUT TAHINI?

    Just leave it out!

    IS BEETROOT POWDER EDIBLE?

    Yes! Beetroot powder is totally edible, delicious, and good for you.

    IS BEETROOT POWDER THE SAME AS BEETS?

    Beetroot powder is made from dried and finely ground fresh beets. You may be wondering.. Is beetroot powder as good as fresh beets? The answer is no. Fresh is always best, but beetroot powder is still loaded with healthy benefits!

    WHAT CAN I USE BEETROOT POWDER FOR?

    HOW TO MAKE BEETROOT POWDER HUMMUS

    STEP 1: STEAM CHICKPEAS

    You can definitely used canned chick peas in this recipe. But, it is more traditional to make it with home made chick peas. And, the home made chick peas taste a lot better!

    I like to soak my dry chick peas overnight or for up to 3 days before I cook them. This helps to soften the tough fibers.

    Then, I drain and rinse my chick peas. I add them to my instant pot along with filtered water. I cover the soaked beans with an inch of water above them. Then I sprinkle a generous amount of smoked paprika on top.

    Just cover your instant pot and pressure cook them for approximately 25 minutes. Use the natural release method to ensure that they are in the steam and become very soft.

    STEP 2: MAKE PINK HUMMUS

    Once you have your chickpeas ready, all you have to do is add all the ingredients from the recipe below to a high powered blender! I blend mine for about 5 minutes. I turn it off once to scrape down the sides and get any chunks into the mixture to blend up.

    And that is it! You can top your hummus with traditional spices like cumin and paprika. And if you want to have the full middle eastern hummus experience, add fresh olive oil and roasted pine nuts on top!

    WHAT TO EAT WITH BEETROOT HUMMUS

    Hummus, in my opinion, is always best with fresh warm naan bread! It's such a good snack and a staple in any Arabic household.

    Ingredients
      

    • 3 cups cooked chickpeas
    • 2 lemons, juiced
    • ½ cup tahini
    • ¼ cup extra virgin olive oil, unrefined
    • ¼ cup water
    • 1 teaspoon salt
    • 1 teaspoon ground cumin
    • 1 teaspoon beet root powder

    Instructions
     

    • Add all ingredients to a blender and pulse for 5 minutes or until smooth and creamy.
    • Store in the fridge for up to a week.
