    Easy Classic Tomato Soup with Bone Broth

    Easy Tomato Soup with Bone Broth. This easy tomato soup recipe is made with coconut oil, gut healing bone broth, and flavorful fresh garlic and onion.

    My delicious healthy bone broth tomato soup has been updated to include a stovetop recipe and a new roasted tomato recipe. Both directions are included in this post. Directions for roasted tomato soup is also included in the notes section of recipe card at the bottom of this post.

    Tomato soup has to be one of the most classic soups I can think of. It reminds me of cold winter days playing outside in the snow and coming inside to warm up.

    But what is even better about the soup, aside from being delicious, is how healthy it is!

    IS TOMATO SOUP HEALTHY?

    Tomatoes are a rich source of lycopene. When tomatoes are cooked, the lycopene is more readily available to your body to use to fight disease! Amazing that with this vegetable, the cooked version has greater benefits than the raw!

    What else makes this soup healthy:

    • Onion: high in vitamin C!
    • Garlic: anti-inflammatory
    • Bone broth: very healing for your gut!

    WHAT'S THE DIFFERENCE BETWEEN CLASSIC AND CREAMY TOMATO SOUP?

    Classic tomato soup is made with tomatoes, broth and flavorings (like onion, garlic, and other spices). Creamy tomato soup is made with canned tomatoes and milk or cream to give it a creamy texture. Both are usually pureed.

    TIPS TO MAKE THE BEST TOMATO SOUP RECIPE WITH BONE BROTH

    USE ORGANIC CANNED TOMATOES. Or even fresh ripe summer tomatoes! But if it is winter time, which is the best soup making time, organic canned tomatoes are the best canned tomatoes for tomato soup!

    COOK ON LOW HEAT FOR 1 HOUR. Allow tomato soup to cook about an hour so the flavors can come together.

    USE AN IMMERSION BLENDER TO PUREE TOMATO SOUP. No pouring of hot soup into a small blender and having extra dishes to clean!

    HOW TO MAKE HEALTHY TOMATO BONE BROTH SOUP AT HOME STOVETOP DIRECTIONS

    This is a great recipe for bone broth soup! Bone broth has so much more protein and health benefits than stock and is great to keep winter colds away.

    Step 1: SautΓ© the onion and garlic

    In a large pot, or an instant pot on the sautΓ© setting, melt the 2 tablespoons of coconut oil. Once it is melted, add the onion. Cook the onion until it is soft and translucent. I add the garlic and cook it only until it is fragrant. If you let your garlic brown, it will create a bitter flavor.

    Step 3: Add the tomato and spices

    Next, add the can of tomatoes, bone broth, the bay leaf, salt, and pepper. Cover, reduce the heat to low, and cook about an hour so the flavors can come together.

    Step 4: Puree and enjoy your easy classic tomato soup

    Finally, your soup is ready to be pureed. The easiest way to do this is with an immersion blender.

    Remove the bay leaf and discard it. Puree the soup to your desired consistency and texture.

    Top your warm soup with some plain kefir, olive oil, and croutons!

    HOW TO MAKE ROASTED TOMATO SOUP WITH BONE BROTH

    If you follow me on youtube, you've probably seen this recipe a couple of times. I know a lot of you come to my website looking for the full directions for recipe videos that I post so here is the written directions for my easy roasted tomato soup with bone broth!

    Roasted Tomato Soup Ingredients:

    • 2 tablespoons olive oil
    • 1 yellow onion, quartered
    • Β½ cup garlic cloves
    • 6 whole vine tomatoes, halved
    • Β½ tablespoon sea salt
    • 1 teaspoon fresh black pepper
    • 2-3 cups bone broth
    • Homemade cashew cream (just blend 1 cup soaked raw cashews with Β½ cup of water till creamy in your blender then pour into your soup)

    Roasted Tomato Soup Directions:

    1. Line a pan with parchment paper and heat oven to 400 degrees Fahrenheit.
    2. Add halved tomatoes, onion, and garlic to your pan. Drizzle with olive oil. Sprinkle salt and fresh cracked black pepper.
    3. Roast in your oven 45 minutes to one hour until tomatoes are softened and starting to brown.
    4. Dump the vegetables into a pot and top with 2-3 cups of bone broth. More broth if you like a thick tomato soup and less broth if you like a thin tomato soup.
    5. Use an immersion blender to purΓ©e the bone broth into your tomato soup.
    6. Add cream if using then pour into a bowl and enjoy! This roasted tomato soup keeps in the fridge up to 5 days.

    Replace the canned tomatoes in this recipe with fresh chopped ripe tomatoes. Then, skip the pureeing step at the end!

    What's good with tomato soup besides grilled cheese? So many things! From some whole grain buttered toast to baked garlic bread or a baked potato. For a lower carb option to go with your tomato soup, try some seared chicken or sausage.

    Easy Classic Tomato Soup with Bone Broth

    This easy classic tomato soup is super delicious and so good for you! The tomatoes are a rich source of vitamin C and antioxidant lycopene.

    • Knife
    • cutting board
    • Soup pot
    • Immersion blender

    Ingredients
      

    • 1 tablespoon coconut oil sub olive or avocado oil
    • 1 yellow onion diced
    • 3 cloves garlic minced
    • 2 cups chicken bone broth
    • 1 28oz can diced tomatoes
    • 1 bay leaf
    • 1 teaspoon pink sea salt
    • Β½ teaspoon black pepper

    Instructions
     

    • In a large saucepan, melt the coconut oil over medium heat.
    • Add the diced onion and saute until the onion is soft.
    • Add the garlic and saute slightly, do not let the garlic brown!
    • Stir in the chicken broth, tomatoes, bay leaf, salt & pepper
    • Cover, reduce heat to low and let cook at least 1 hour to allow the flavors to combine.
    • Remove the bay leaf, and use an immersion blender to puree the soup, or transfer to a blender to puree.
    • Serve hot and enjoy!
