    This purple sweet potato soup is so gorgeous! See that deep purple color? That is actually thanks to the antioxidant content! I think people associate potatoes with french fries and think they are unhealthy. But, actually they are really good for you (non-fried).

    Not only a gorgeous purple color, this purple sweet potato recipe is also super easy to make and delicious!

    ARE PURPLE POTATOES HEALTHY FOR YOU?

    Yes! Purple potatoes are excellent for your health. Purple sweet potatoes are rich in antioxidants that can help with gut health and lowering inflammation all over your body. They are also high in fiber, copper, vitamin B6, vitamin C, potassium, and manganese!

    TIPS TO MAKE THE BEST PURPLE SWEET POTATO SOUP EVER

    STEAM OR BAKE PURPLE SWEET POTATOES TILL SOFT.

    SAUTE ONIONS TILL SOFT AND TRANSLUCENT. Onions add the best base soup flavor!

    COOK 30 MINUTES ON LOW AFTER ADDING SPICE. Allow time for the potatoes to soak up the flavor.

    PUREE USING AN IMMERSION BLENDER. This is so much easier than transferring to a blender to puree!

    WHAT IS UBE?

    Ube is a purple sweet potato or purple yam that originated in southeast Asia.

    ARE PURPLE POTATOES HEALTHIER THAN SWEET POTATOES?

    They each have their own unique benefits! Purple potatoes are high in a special antioxidant only found in purple plants. Sweet potatoes are super high in beta carotene, potassium, and fiber. It is super important to eat a variety of colored plant foods throughout the week because they all have something a little bit different for your health!

    DO PURPLE SWEET POTATOES TASTE DIFFERENT?

    Purple sweet potatoes have a milder taste than orange sweet potatoes. They are also a little more dry and starchier than sweet potatoes.

    WHAT IS PURPLE SWEET POTATO GOOD FOR?

    Purple sweet potatoes are good for roasting, baking, frying, and boiling. You can even make air fried potato fries with them! Leave the skin on to get all the nutrients and fiber benefits.

    CAN PURPLE SWEET POTATO BE BOILED?

    Yes! You can boil purple sweet potatoes until they are soft. Make sure not to over boil them or they will become mushy.

    IS PURPLE SWEET POTATO SOUP VEGAN?

    To make vegan purple sweet potato soup, simply replace the bone broth with vegetable broth. All other ingredients in my soup are vegan and dairy free friendly.

    HOW TO MAKE PURPLE POTATO SOUP HOME

    Step 1: Bake or steam purple sweet potatoes

    Start by steaming the sweet potatoes. You can  steam them for about 10 minutes on the high pressure setting in your instant pot. Or, you can bake your potatoes in the oven at 375 degrees for about 30 minutes or until it is soft.

    Step 2: Sauté the onion

    Meanwhile, melt the coconut oil over medium heat. You can also use any other high heat oil like avocado oil or algae oil. Once the oil is heated, add the onion. Sauté the onions until soft and translucent.

    Step 3: Add the rest of the ingredients

    Remove the purple sweet potato from the skin. Add to the pot. Add the cumin, broth, sea salt, and pepper.

    Cover and cook for about 30 minutes so all the flavors can come together nicely.

    Step 4: Puree the purple sweet potato soup

    Finally, your soup is ready to be pureed. The easiest way to do this is with an immersion blender. No pouring of hot soup into a small blender and having extra dishes to clean! You can find the immersion blender I use on the kitchen gadget's page of my amazon shop account!

    HOW TO SERVE PURPLE SWEET POTATO SOUP

    Top your warm soup with some fresh plain greek yogurt. Plain coconut yogurt is also good on it! You can also add olive oil and green onions!

    Equipment

    • Large soup pan
    • Immersion blender

    Ingredients
      

    • 2 teaspoon coconut oil
    • 1 yellow onion diced
    • 2 large purple sweet potatoes (ube, purple yam) ~2 cups mashed
    • ½ teaspoon ground cumin
    • 4 cups chicken bone broth
    • 1 teaspoon sea salt
    • ½ teaspoon black pepper

    Instructions
     

    • Prick sweet potatoes with a fork and bake at 375 for ~30 minutes or until potato is soft
    • Meanwhile, in a large pan over medium heat, sauté the onion in the coconut oil. Add the peeled purple sweet potatoes.
    • Stir in the cumin, bone broth, salt and fresh black pepper.
    • Cover and reduce heat to low, cook 30 minutes.
    • Remove lid and using an immersion blender, or by transferring to a standing blender, puree the soup.
    • Serve warm and enjoy!
