BAKE OR ROAST PURPLE SWEET POTATOES TILL SOFT. If you want a truly unique purple potato soup and have a little extra time, roast your purple potatoes in the oven before adding to your soup for even more flavor!
SAUTE ONIONS TILL SOFT AND TRANSLUCENT. Onions add the best base soup flavor! I always start my healthy soup recipes with caramelized onion which adds SO much flavor to soup.
COOK 30 MINUTES ON LOW AFTER ADDING SPICE. Allow time for the purple potatoes to soak up all the delicious flavor of the spices.
PUREE USING AN IMMERSION BLENDER. This is so much easier than transferring to a blender to puree!
HOW TO MAKE PURPLE POTATO SOUP HOME
This romantic purple potato soup recipe is SO easy to make and will compliment any special romantic dinner!
Step 1: Sauté the onion
Melt the coconut oil over medium heat. You can also use any other high heat oil like avocado oil or algae oil. Once the oil is heated, add the 1 diced red onion. Sauté the onions until soft and translucent and beginning to caramelize.
Step 2: Add all the rest of the ingredients
- 4 large purple sweet potatoes (~8 cups diced purple potato)
- 1 teaspoon dried rosemary
- 1 teaspoon ground coriander
- ¼ teaspoon ground nutmeg
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 6 cups chicken bone broth
Cover your purple soup and cook for about 30 minutes so all the flavors can come together nicely.
Step 3: Puree the purple sweet potato soup
Finally, your soup is ready to be pureed. The easiest way to do this is with an immersion blender. No pouring of hot soup into a small blender and having extra dishes to clean!
HOW TO SERVE PURPLE SWEET POTATO SOUP
Top your warm soup with some fresh plain Greek yogurt.
Plain coconut yogurt is also good on it! You can also add olive oil and green onions!
HOW TO MAKE ROASTED PURPLE POTATO SOUP INSTEAD
If you have a little extra time, roasting the purple potato adds even more delicious flavor to your healthy romantic soup recipe! Prick the purple sweet potato all over the outside. Roast it in your oven at 375 degrees fahrenheit for about 30 minutes till it is nice and soft.
Then add it directly to your soup along with the broth! You can leave the skin on or off it is up to you. I love leaving the potato skin on for soup because I am pureeing it anyway (so you don't even notice you're eating potato skin) but also because the potato skin has so much more nutrients!

- 1 red onion, diced
- 4 large purple sweet potatoes (ube, purple yam) ~8 cups diced purple potato
- 1 teaspoon dried rosemary
- 1 teaspoon ground coriander
- ¼ teaspoon ground nutmeg
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 6 cups chicken bone broth
Instructions
- In a large pan over medium heat, heat the oil.2 teaspoon coconut oil or avocado oil
- Add the red onion and cook until the onion starts to caramelize.
- Once red onions are caramelized, add the peeled and chopped purple potatoes, broth, spices, salt, and pepper.
- Cover and reduce heat to low, cook 30 minutes.
- Once potatoes are fork soft, use your immersion blender to puree the soup completely.Serve warm and enjoy!
