    Get ready for another healthy and indulgent breakfast recipe of Raspberry Cheesecake Chia Seed Pudding! My raspberry cheesecake chia pudding is excellent for gut health and overall longevity and radiance.

    I absolutely love eating chia seed pudding for breakfast and for snack. I always have a couple of jars of chia seed pudding prepared in the fridge for when I'm feeling too busy or tired to cook.

    Chia seed pudding is packed with so many healthy benefits and are known as one of the top superfoods for a reason! They're packed with healthy fats, antioxidants, fiber, and plant based protein. All of these are essential for living a long and healthy life.

    RASPBERRY CHEESECAKE CHIA SEED PUDDING INGREDIENTS

    I made this incredible chia seed pudding recipe with just a few simple ingredients, all of which are excellent for your health!

    I also decided to layer the chia pudding with the Greek yogurt "cheesecake" to create a beautiful presentation. Because we eat with our eyes first and I love making healthy food look absolutely beautiful too!

    I'm including ingredients for just 1 jar of raspberry cheesecake chia seed pudding, so that you can decide how many jars you want to make and the math will be easier this way.

    Ingredients per jar:

    • 2 tablespoons chia seeds
    • ½ cup milk of choice (I used coconut)
    • ½ teaspoon pure vanilla extract
    • 1 tablespoon raw honey
    • ¼ cup raspberries
    • ¼ cup Greek yogurt
    • ½ tablespoon raw honey

    IS CHIA PUDDING ACTUALLY GOOD FOR YOU?

    Is chia pudding healthy? Yes, chia pudding is as excellent healthy choice! Chia seeds are rich in healthy fats and nutrients like fiber, protein, and antioxidants. They can help improve your gut health, digestion, and even help regulate blood sugar levels because of their high fiber content.

    WHAT DOES CHIA PUDDING DO TO YOUR GUT?

    Chia seeds are an excellent source of fiber and anti-inflammatory compounds, which can reduce inflammation in your gut, feed your good gut bacteria, and support a healthy digestion. By reducing inflammation and helping your good gut bacteria thrive, chia seeds can help alleviate gas, bloating, and diarrhea.

    DOES CHIA PUDDING SPIKE INSULIN?

    Chia seeds alone should not spike insulin! They are low in carbs and high in fiber and also high in protein. Together, this makes chia seeds an excellent food to incorporate for balanced blood sugars.

    However, as a registered dietitian I want to note that just because something has a super healthy ingredient, does not automatically make it healthy. Watch out for added sugar and sweetened milks that can spike blood glucose.

    Instead, make sure to use unsweetened milks, add fresh fruit and if you add sweetener, to choose a little and choose a natural based sweetener like raw honey.

    HOW TO MAKE MY RASPBERRY CHEESECAKE CHIA SEED PUDDING RECIPE

    My delicious raspberry cheesecake chia seed pudding is like indulging in dessert for breakfast! I love how versatile chia seeds are and how fun it is to get creative with them. Let's get started by making the chia seed pudding itself!

    STEP 1: MAKE THE CHIA PUDDING

    This recipe only makes 1 jar of chia pudding. I did this on purpose because everyone likes to prep a certain number of jars for the week. I myself make chia pudding 3 jars at a time because I crave different flavors frequently.

    But this recipe is good to make as many as 5 jars, as that is about how long chia seed pudding will last in the fridge. So whether you're making 1 jar, or 5 jars, follow the ingredients below and multiply by how many you like!

    In a bowl, mix together:

    • 2 tablespoons chia seeds
    • ½ cup milk of choice (I used coconut milk this time for a creamy chia pudding texture)
    • ½ teaspoon pure vanilla extract
    • 1 tablespoon raw honey

    Mix the chia pudding at least 1 time per minute for the first 5 minutes to prevent chia seeds from lumping together. I like to give my chia pudding a fast mix, let it rest while I do some dishes, and keep repeating for the first few minutes.

    Then, let your chia seed pudding thicken even further for about 15 minutes before layering it in your jars.

    STEP 2: MAKE THE "CHEESECAKE"

    Next, is the delicious cheesecake layer! I like to make this while my chia seed pudding thickens.

    This raspberry cheesecake layer for the chia seed pudding recipe makes only 1. So if you're preparing more than 1 jar, simply multiply these ingredients to how many you like.

    In a small bowl add ¼ cup raspberries and mash them until they are pureed. If you don't like raspberry seeds, you can use a blender to puree them totally.

    Next, stir in ¼ cup yogurt and ½ tablespoon honey.

    Set this aside for layering your raspberry chia seed pudding jar!

    STEP 3: LAYER AND STORE

    Now the fun part, layering your raspberry cheesecake chia pudding jars!

    Add half the chia seed pudding to the bottom of a jar.

    Top with half the raspberry "cheesecake."

    Add the remaining chia seed pudding.

    Finally add the rest of the raspberry cheesecake.

    Top your jars with fresh raspberries and enjoy!

    CHIA PUDDING STORAGE

    Raspberry cheesecake chia seed pudding can be stored in the fridge for up to 5 days!

    VARIATIONS

    • CHIA SEED PUDDING BLUEBERRY YOGURT. Instead of raspberries in this recipe, you can replace them with ¼ cup blueberries mashed into the yogurt and honey. This makes a delicious blueberry cheesecake chia seed pudding!
    • GROUND CHIA SEED PUDDING. Don't like the texture of chia seeds? You can blend the chia seed pudding in a blender and layer it in between the cheesecake layers!

    Kim Kardashian's Chia Pudding is super simple chia pudding recipe made with just 3 ingredients: 2 tablespoons Chia seeds, ½ cup of almond milk (she uses unsweetened), and ½ tablespoon Honey. Her chia seed pudding recipe is actually very healthy and very similar to the one I have here.

    WHY IS MY CHIA PUDDING NOT TURNING INTO PUDDING?

    If your chia pudding isn't thick enough, it could be either because there is not enough chia seeds and too much milk, or your chia seeds are spoiled. The best chia to milk ratio is 1 tablespoon chia seeds per ¼ cup of milk. If you used this ratio and it is not getting thick, chances are your chia seeds are not good anymore and you should get a new bag.

    For the Chia Seed Pudding:

    • 2 tablespoon chia seeds
