I've been working on making some matcha lattes recently and realized I haven't made green tea chia pudding. So I decided to experiment with my matcha further and make it into a super healthy and anti inflammatory matcha chia pudding parfait!

IS MATCHA CHIA PUDDING HEALTHY?
- Chia seeds are a nutrition powerhouse! The tiny seeds contain so many nutrients like calcium, manganese, magnesium, and phosphorus. They are an excellent source of fiber, protein, and fat, namely heart healthy omega-3 fats. And if all of that doesnβt make them great enough, they are also an excellent source of antioxidants! Those antioxidants protect the delicate omega-3 fats from going rancid.

TIPS TO MAKE THE BEST MATCHA CHIA PUDDING RECIPE
USE HIGH QUALITY MATCHA POWDER. This will give you the best matcha flavor in your chia seed pudding.
MIX CHIA SEEDS AND MILK MULTIPLE TIMES. To make sure the chia seeds start to soak up the milk evenly for perfect smooth matcha chia pudding, make sure to whisk a few times in the first 10 minutes before soaking overnight.
GEL OVERNIGHT. I love soaking chia pudding overnight. Chia seeds are amazing because they can absorb the flavors of anything they are in. So when they're soaked overnight, you will not only get an amazing flavor, but also an great texture!
EAT CHIA SEED PUDDING WITH YOGURT AND FRUIT. There is nothing better than adding yogurt and fruit to your chia pudding for the biggest nutritional benefits!
HOW TO MAKE HEALTHY MATCHA CHIA PUDDING
This healthy matcha chia pudding recipe is enough for 4 servings! You can make all 4, which will last in your fridge up to 5 days and makes a perfect healthy snack or even light breakfast. Or, make as many servings as you need.
The ratio for this 1 serving recipe is 2 tablespoons of chia seeds, Β½ cup milk of choice, 1 teaspoon matcha green tea powder, and honey.
INGREDIENTS YOU NEED FOR MATCHA CHIA PUDDING:
- 8Β tablespoonsΒ chia seeds
- 4Β teaspoonsΒ matcha powder
- 2Β cupsΒ milk of choice
- Honey or maple syrup to taste (I usually use about Β½ tablespoon per serving)
EQUIPMENT YOU NEED:
- Small bowl
- 4 glass storage containers (or 1 big one)
- Fork or small whisk
STEP 1 Make your matcha chia pudding
Start by making your healthy matcha chia pudding. In order for it to have that nice "pudding-like" texture, you will want to let it soak for at least 15 minutes. I prefer my chia to soak in the fridge overnight.
Add all ingredients to 1 big glass container, or divide evenly between 4 smaller on the go containers:
- 8 tablespoons chia seeds (2 tablespoons per jar)
- 4 teaspoons matcha green tea powder (1 teaspoon per jar)
- 2 cups milk of choice (Β½ cup per jar)
- 2-4 tablespoons honey (Β½-1 tablespoon per jar)
Whisk the chia seeds into the matcha and milk very well to combine. Then, let it rest for a couple of minutes before mixing again. Rest another minute or two then mix again.
You are looking for a thick pudding like texture that can support the weight of adding yogurt on top and even fruit. I mix mine about 5 times within the first 5-10 minutes so that there are no lumps and the chia seeds gel evenly. This is a necessary step if you want the best matcha chia seed pudding because chia seeds soak up liquid very quickly!
STEP 2 Store overnight
Chia seed pudding can be eaten after about 15 minutes of soaking, that is plenty of time. But, it is best if you allow it to soak overnight because the chia seeds will soften more and become more delicious.
This matcha chia seed pudding recipe will last up to 5 days if you store it in an airtight container in your fridge.
I love to serve my matcha chia seed pudding recipe with yogurt, kiwi, and a bit more honey drizzled on top. It is super delicious and incredibly gut healthy.
Or, simply serve it in a bowl with any kind of fruit on top!
Either way, matcha chia pudding is healthy and delicious!
STORAGE
Store in the fridge for up to 5 days. Chia seeds have a pretty long shelf life when they're stored in the fridge dry. But, once they are soaked, their shelf life declines significantly. So, make sure to eat it up within this time!

CAN I MAKE CHOCOLATE MATCHA CHIA PUDDING INSTEAD?
Yes! Just like adding strawberries, you can add 1 tablespoon of cacao powder to the chia seeds along with the green tea powder. Soak overnight for the best results!

For the matcha chia pudding:
- 8 tablespoon chia seeds
- 4 teaspoon matcha powder
- 2 cups unsweetened soy milk sub any other kind of milk
- 4 teaspoon honey
Optional toppings:
- 2 kiwi or any fruit you like!
- β cup muesli or granola
Instructions
- Prepare the chia pudding by mixing the chia seeds, matcha powder, milk, and honey. If you like sweeter chia seed pudding, you can add more honey or use more honey as a topping.(If you are preparing for meal prep, you can divide this between 4 airtight glass jars instead of 1 big container)8 tablespoon chia seeds, 4 teaspoon matcha powder, 2 cups unsweetened soy milk, 4 teaspoon honey
