TIPS FOR MAKING THE BEST TROPICAL RAINBOW FRUIT SALAD WITH MINTY HONEY LIME DRESSING
USE FRESH RIPE FRUIT. Make sure to use fresh ripe fruit for the best flavor. Don't use fruit that is hard & unripe, which will not have much flavor or a good texture.
USE FRESH MINT. Fresh quality mint leaves give this homemade fruit salad its uniqueness. Mint fruit salad dressing makes it taste like a mojito fruit salad!
SERVE THE DAY OF. My rainbow fruit salad is best eaten the day of.
ONLY STORE FOR 1-2 DAYS. If you do have to store it, cover it with a lid and store it in the fridge for up to 2 days. The fruit that goes bad the fastest is the kiwi, so if you are storing it, leave the kiwi out until you're serving it.
MAKE MY RAINBOW FRUIT SALAD WITH HONEY MINT DRESSING
Grab all your homemade fruit salad ingredients first before you get started! If you don't have any of the fruits in the recipe, or don't like them, simply swap them out for a fruit that you like.
INGREDIENTS YOU NEED
For the rainbow fruit salad you will need: 2 cups fresh strawberries, 2 fresh mangoes, 2 cups fresh pineapple, 4 kiwi, 2 cups blueberries, and 2 cups red grapes.
For the honey lime mint dressing you will need: 1 cup fresh mint leaves, 2 limes, and ¼ cup raw manuka honey.

HOW TO MAKE A SIMPLE RAINBOW FRUIT SALAD RECIPE
Chop all of your fruit. Add the fruit to a large mixing bowl.
Make the honey lime dressing.
HOW TO MAKE HOMEMADE HONEY LIME MINT SALAD DRESSING
In a blender add 1 cup fresh mint leaves, the juice and pulp of 2 limes, and ¼ cup of raw honey. Blend to completely puree.
Pour the dressing over your salad.
Toss to completely coat the fruit in the dressing.
