    Collard Green Rolls. My homemade rainbow collard green rolls are made with a flavorful creamy peanut dipping sauce. Collard green rolls are super healthy for you and a great healthy lunch or appetizer recipe!

    I recently ordered a vegetable delivery box, ahem upstate New York winter, and have been looking for a way to use up all the produce! So I of course turned the internet for some inspiration. And I stumbled on collard green wraps!

    Collard greens rolls are a great way to use up hummus, leftover farro, and any vegetable! Don't limit yourself with the vegetables I used, you can use any vegetable you have on hand in my rainbow collard rolls recipe!

    ARE RAINBOW COLLARD GREEN ROLLS HEALTHY?

    Yes! My collard green rolls is a super healthy recipe! A blanched collard green leaf filled with tasty hummus, whole grain farro, and a mixture of colorful vegetables.

    • Peanut butter is another rich source of plant based protein, plus it has great healthy fats.

    RAINBOW VEGAN COLLARD WRAPS INGREDIENTS:

    For the Collard Rolls:

    • Collard greens
    • Carrots
    • Pepper
    • Purple cabbage
    • Farro
    • Peanuts (optional)
    • Cilantro
    • Garlic hummus

    For the Peanut sauce:

    • Creamy peanut butter
    • Soy sauce
    • Rice vinegar
    • Water
    • Garlic
    • Maple syrup or honey (optional)

    HOW TO MAKE COLLARD GREEN ROLLS

    First, gather your ingredients.

    INGREDIENTS YOU NEED:

    • For the Collard Wraps:
    • 1 bunch Nature’s Greens whole collard greens
    • 2 whole carrots
    • 1 whole red or orange pepper or 4 small peppers
    • 2 leaves purple cabbage or a ½ cup shredded purple cabbage
    • 2 cups farro cooked per package directions
    • ¼ cup peanuts optional
    • ¼ cup fresh cilantro
    • ½ cup garlic hummus
    • For the Peanut sauce:
    • ¾ cup natural creamy peanut butter
    • ¼ cup soy sauce or liquid aminos
    • 2 cloves garlic, minced
    • ¼ cup rice vinegar sub apple cider vinegar
    • ¼ cup water
    • 2 tablespoons maple syrup sub honey

    EQUIPMENT YOU NEED:

    • Cutting board
    • Knife
    • Large flat bottom pan
    • Large bowl (for ice bath)
    • Plates with paper towels (for cooling cooked collards)
    • Small bowl (for mixing the peanut dipping sauce)
    • Whisk

    Step 1: Prepare your collard green wrap fillings

    Cook the farro according to the package directions. That way, you can prepare the rest of your collard rolls ingredients while the farro cooks.

    While your farro cooks, grab a cutting board and a knife. Make sure you thoroughly rinse and clean your vegetables. For these wraps, I used carrots, red cabbage, and mini red peppers.

    Slice the carrots and red peppers (or whatever vegetable you use) into thin matchsticks.

    Either shred or chop the red cabbage. And if you have green cabbage, by all means use that!

    HOW TO PREPARE COLLARDS FOR ROLLING

    Slice the long ends and excess stem off the collard green. If the stem seems particularly large, you can cut a portion of it out. But, the blanching, which we will get to next, will help to soften the stem and make it easier to roll.

    Look for a nice round or oval shaped leaf without any rips or tears.

    When the farro is done cooking, I like to add some olive oil and sea salt. This helps bring out the flavor. And the oil also helps the grains to not stick together.

    Step 2: Blanch the collard greens

    Next, you're going to blanch the collard green leaves. This really just helps them to become more flexible and less likely to rip or break when you roll them up.,

    Blanching basically is just quickly boiling and then quickly cooling it down so it doesn't lose too many nutrients.

    Start by bringing a large shallow pot to a gentle boil. I like to use a deep frying pan with a flat bottom. Place each leaf in the water one at a time for only 5 seconds!

    On your counter, near the boiling pan, keep a deep dish or mixing bowl filled with ice water. This will be your "ice bath."

    And then next to that, have some dry towels or paper towels to place between each leaf. You don't want them sitting in the water and getting soggy.

    Step 3: Fill your collard green wraps

    Finally, the moment you have been waiting for. Filling your collard green wraps!

    Start with a layer of hummus on the bottom. Then add a scoop (or 2 of farro depending on how big your leaf is). Add the veggies on top of that.

    Start by folding in the two sides and then roll it up the long way. Kind of like a burrito if that makes sense!

    Step 4: Make the homemade peanut dipping sauce

    The peanut dipping sauce is a must! It adds so much delicious flavor. It is also super easy to make!

    All you have to do is add all the ingredients to a blender and pulse until it is smooth and creamy.

    If you don't have a blender, whisk all the ingredients for your Thai peanut sauce in a small mixing bowl till totally combined.

    HOW TO STORE RAINBOW COLLARD ROLLS

    To store the wraps, place them in a covered or air tight container. Do the same with the dip. These not only make a great appetizer, but also a good lunch option!

    The healthiest way to eat collard greens is to eat them!! Collard greens are incredibly healthy on their own. Skip the frying with oils, bacon, and cheese. Instead, roll them with other healthy ingredients like hummus, whole grains, and veggies.

    How long does it take for collard greens to get tender?

    You only have to blanch collard greens in simmering water for about 5 seconds and they will be the perfect texture for rolling!

    How long do collard greens wraps last?

    Store collard rolls in the fridge in a tightly covered container for up to 3 days. The peanut sauce will last a little longer, up to 1 week.

    For the Collard Wraps:

    • 2 cloves garlic, minced

    Instructions
     

    How to Make the Collard Green Rolls:

    • Cook the farro according to package directions.
      Prepare the collard leaves-- you can either have them raw and cut the stems out, or you can blanch them.
    • a. to blanch: fill a large shallow pan with water (a frying pan would work), bring to a low boil.
    • b. add 1 leaf at a time, making sure it is fully submerged, for ~5 seconds
    • c. remove the leave and add directly to an ice bath
    • d. pat dry with a towel
    • Prepare the vegetable filling for the collard greens by slicing the carrots and pepper into thin matchsticks, shredding the cabbage, and chop the cilantro.
    • To fill: place 1 collard green on a flat surface, spread with hummus, and scoop ~¼ cup farro and a mixture of the prepared vegetables.
    • To roll: Roll it like a burrito! Fold the sides ¼ way over your fillings, then roll it up!

    How to Make the Collards Peanut Dipping Sauce:

    • To prepare your sauce, whisk all the ingredients in a bowl until smooth and creamy.
      Or, add all ingredients to a small blender and pulse until pureed.
    • Dip and enjoy!

    This collard greens rolls recipe can easily be adjusted and doubled. If there is a vegetable in the filling that you don’t like, substitute it for one you prefer. You can also use more or less of the collards filling depending on the size of the collard green leaves.
    For the collard greens dip, if you do not like any pieces of garlic, add your ingredients to a blender or food processor and pulse until it us smooth and creamy.
    Store collard green wraps in the fridge for up to 3 days.
    Store the peanut dipping sauce in the fridge, in a sealed container, for up to 1 week.
