So I made my very first focaccia bread recipe just last week can you believe it?! It was so incredibly easy and delicious that I just had to share the recipe with you guys! But, I followed a recipe that claimed to be in 1 hour but actually took 2 hours after mixing, rising, and baking.
My easy one hour focaccia bread recipe really takes one hour from start to finish!

1 HOUR FOCACCIA BREAD INGREDIENTS
- All purpose flour
- Wheat germ
- Instant yeast
- Pink sea salt
- Olive oil
- Water
- Rosemary
1 HOUR FOCACCIA BREAD HOW IS IT POSSIBLE?
This past week I experimented with a quick focaccia bread recipe to give you guys a focaccia that is ready to eat in just 1 hour! How did I do it? First, I added some wheat germ, which gives the yeast more food and makes it rise faster.
Second, I rose my focaccia dough in my oven proofer. The warmth will help SO much in giving you a quick focaccia bread rise.
Third, I added a stretch and fold after 15 minutes. Originally, I added my mixed dough right to a pan and then let it rise for an hour.. I decided to try a stretch and fold to help distribute the yeast and gluten around and help it rise faster.. and it worked so well! Cutting my rise down by half!
1 hour focaccia bread timing broken down:
- 5 minutes to mix the dough
- 15 minutes to rise in the bowl
- 2 minutes to apply stretch and fold
- 15 minutes to rise in the pan
- 3 minutes to top
- 20 minutes to bake
- = focaccia bread ready in just 1 hour flat!
HOW LONG SHOULD I LET MY FOCACCIA RISE?
Most traditional focaccia bread recipes will take 2 or more hours just to rise the dough. This rise time helps to develop a lot of flavor and those big airy holes in your focaccia bread. My quick focaccia bread recipe is a spin on your classic focaccia with just 30 minute rise time!
IS FOCACCIA BREAD GOOD FOR WEIGHT LOSS?
As a registered dietitian I can say yes you can definitely eat focaccia bread and still lose weight! I believe all foods fit in a healthy diet and you can fit your favorite foods too, like focaccia bread. My focaccia bread recipe is made healthier with wheat germ which adds more protein and fiber.
When losing weight, make sure you are eating 8-10 servings of vegetables per day, high quality protein, quality fats, and at least 25 grams of fiber.. along with your one hour rosemary focaccia bread 🙂
HOW TO MAKE ONE HOUR ROSEMARY FOCACCIA BREAD
STEP 1- MAKE THE DOUGH
In the bowl of a standing mixer (no standing mixer see notes in the recipe card below), add all of the ingredients for your focaccia dough:
- 4 cups all purpose flour (unbleached)
- ½ cup wheat germ
- 2 teaspoons pink sea salt
- 1 ½ tablespoon instant yeast
- 4 ½ tablespoons olive oil
- 2 ½ cup warm water
Turn your mixer on medium speed and mix for about 2 minutes till the dough is well combined. It should look very runny and not come together in a ball.
If your focaccia dough comes together in a ball you have too much flour and should gradually mix in a little water till you get the texture that resembles the picture below.
STEP 2- QUICK RISE
Scrape the sides of your bowl down. Cover the bowl with a towel and place in your oven for 15 minutes with the oven proofer on.
After 15 minutes, remove the dough from the oven. Drizzle olive oil on your hand. Stretch and fold the dough about 5 times to re distribute the yeast.
How to stretch and fold your focaccia dough:
Stretch and fold by stretching a side of the dough up towards the ceiling and then pushing it in towards the center. Do this around the entire diameter of the dough.
Transfer the dough to an oiled 9 x 13 inch pan. Cover and place the pan back in your oven on proof for another 15 minutes.
After 15 minutes, remove your pan from the oven.
Preheat oven to 375 degrees.
STEP 3- TOP AND BAKE
Drizzle focaccia dough with olive oil. Rub the olive oil across the top of the dough. Next, use your fingers to press indentations evenly across the top of the dough. Press almost to the bottom of the pan.
Sprinkle any topping you can like!
Focaccia bread topping ideas:
- fresh or dried herbs (I love Italian seasoning and rosemary)
- sliced vegetables (ripe tomatoes are delicious)
- sliced olives
- fresh minced garlic
Bake in your preheated oven for about 20-25 minutes till the edges and top look golden brown. Cool completely before slicing.

HOW TO SLICE FOCACCIA BREAD
I love slicing focaccia bread into squares, which make a pretty big portion! Some people like slicing focaccia into thin strips which makes for excellent dipping bread!
HOW TO STORE FOCACCIA BREAD
Focaccia bread, which is a fresh bread will go stale very quickly! Only store your focaccia bread at room temperature (covered) for 1-2 days.
Focaccia bread freezes very well so if you don't plan on eating the whole loaf I suggest freezing it as soon as it has cooled down this will preserve the texture very well!
I also love slicing focaccia into very tiny squares and then freezing in bags so I can toast them later into croutons!

Frequently asked questions about my quick focaccia bread recipe.
Can I use all purpose flour only and no wheat germ?
Yes, you can replace the ½ cup wheat germ with another ½ cup all purpose flour. Follow all the same steps for focaccia bread above. But, keep in mind that your rise time might be longer, up to 1 hour instead of ½ hour.
Why does focaccia have to rise so long?
Most traditional focaccia breads are similar to artisan breads and require much more time to rise. You can definitely use this quick focaccia bread recipe and apply a stretch and fold 3 times in 2 hours to have an even more complex flavor in your focaccia bread!
Why is my focaccia not fluffy?
If you have flat and gummy focaccia bread, you might have not heated your oven properly. Focaccia bread needs a hot oven to quickly rise and develop gasses to make the dough expand. Make sure to put your focaccia into the oven and close the door quickly to prevent heat from escaping!
Is focaccia just pizza dough?
No! Focaccia is different than pizza dough because focaccia uses more yeast than pizza dough does, giving focaccia a lighter fluffier texture.
What are the two types of focaccia?
There are two main types of focaccia: genovese, and recco. Focaccia genovese is thicker and softer. Recco focaccia has two thinner layers of dough with cheese in between.
