HEALTHY COOKIE DOUGH ICE CREAM INGREDIENTS
Just 5 simple ingredients in this healthy dessert! And it can be made right in your blender no fancy kitchen equipment needed!
- 8 over ripe bananas
- 2 cups raw cashews
- 1 teaspoon sea salt
- 4 teaspoon pure vanilla extract
- 4 Laura bars or my homemade chickpea cookie dough
IS COOKIE DOUGH ICE CREAM GOOD FOR YOU?
Cookie dough ice cream from the store is usually not healthy. Even the ones listed as vegan cookie dough ice cream or keto cookie dough ice cream are not healthy and are loaded with sugar or artificial sweeteners.
My healthy cookie dough ice cream recipe is made with all good for you ingredients and is naturally sweetened with just bananas!
HEALTHY BENEFITS OF MY ICE CREAM FOR YOUR SKIN!
Unlike regular ice cream from the store that is loaded with sugar and dairy, which causes skin damage and acne in most women, my ice cream recipe actually is good for your skin!

HOW TO MAKE HEALTHY COOKIE DOUGH ICE CREAM AT HOME IN A BLENDER
STEP 1: SOAK CASHEWS OVERNIGHT
In a glass bowl or dish add 2 cups of raw cashews. Cover them completely with water and soak overnight in the fridge. You can soak cashews overnight on the counter if you live in a cooler climate.
STEP 2: BLEND ICE CREAM
The next day, drain the water from your cashews and add them to a high powered blender or food processor along with the other healthy ice cream ingredients:
- 8 over ripe bananas
- 2 cups raw cashews
- 1 teaspoon sea salt
- 4 teaspoons pure vanilla extract
Blend until completely silky smooth.
STEP 3: STIR IN COOKIE DOUGH AND FREEZE
Pour your blended banana and cashew ice cream into a parchment paper lined bread loaf pan. Stir in cookie dough of choice.
You can use a healthy cookie dough protein bar chopped up, like a laura bar. Or, you can make homemade cookie dough and stir it in.
Place in the freezer to firm up, about 1-2 hours.
Thaw at room temperature 10 minutes before serving for buttery smooth ice cream.

Yes! You can use a can of full fat coconut milk in place of the raw cashews. However, I found it's gives a more icy and less creamy texture than the cashews.

I used frozen bananas in my healthy cookie dough ice cream recipe, you can also use fresh. The fresh ones may take longer to freeze into ice cream and stirring it once or twice during the freezing process will help prevent an icy texture.
