    Strawberry Champagne Popsicles! Ever wonder what to do with leftover champagne? If you're like me and hate to dump a perfectly mostly full bottle of champagne, blend up these delicious and refreshing champagne popsicles with strawberries!

    We were enjoying a bottle of champagne the other day and left it to chill in the fridge. The next day, I found the half drank bottle of champagne. Normally, I would just pour it out and then recycle the bottle. But then I thought I wonder if there's anything to make with leftover champagne!

    So I saw a couple recipes for champagne in your dinner, and then I remembered that boozy popsicles existed and wondered if champagne could be frozen into popsicle form. I added some strawberries in the mix to make sure that they froze solid along with a little sweetener.

    And oh my gosh, these champagne popsicles were so good! If you have a leftover bottle of champagne, or even a whole bottle you need to make these!

    WHAT ARE CHAMPAGNE POPSICLES MADE OF?

    • 1 Β½ cups champagne (about half the bottle of champagne)
    • 5 cups strawberries (frozen then thawed, or fresh)
    • ΒΌ cup honey or agave nectar

    And that's it! I'm going to keep this post pretty short and sweet today because I'm off to run some errands and work on my summer garden. Summer does not last long enough in New York, so I'm taking full advantage of the nice day!

    HOW TO MAKE CHAMPAGNE POPSICLES

    These boozy champagne popsicles are so easy to make and a perfect recipe for strawberry season!

    STEP 1 ADD STRAWBERRIES AND CHAMPAGNE TO YOUR BLENDER

    First, add 5 cups of fresh or frozen and then thawed strawberries to your blender. Top it off with about 1 Β½ cups of champagne (half a bottle) and a quarter cup of honey or agave if you want your popsicles even sweeter.

    STEP 2 BLEND TILL SMOOTH

    Turn your blender on medium high and blend till they are totally smooth. If you do like strawberry chunks in your popsicles, simply pulse on low until it is the texture that you like!

    STEP 3 POUR INTO POPSICLE MOLDS AND FREEZE

    Divide the strawberry champagne popsicle mix between your popsicle molds. Make sure to fill them almost to the top but leave a little room for expansion.

    Cover your popsicle mold and insert popsicle sticks. Freeze overnight to set.

    HOW TO MAKE A STRAWBERRY CHAMPAGNE SLUSHY INSTEAD

    So I discovered that this also makes a delicious champagne slushy too when I had a little mix leftover after pouring my popsicles! If you want to make strawberry champagne slushies instead of popsicles, just blend your champagne with frozen strawberries and enjoy immediately!

    Can I use a different type of fruit?

    Yes! You can really use any kind of fruit that you like with your champagne. If you tried a different fruit please leave me a comment and let me know how they turned out! πŸ™‚

    Why did you use frozen then thawed and not just fresh strawberries?

    The only reason I did this was because I did not have fresh strawberries on hand, and thawed strawberries blended faster into the champagne! If you have fresh strawberries, definitely use those!

    Equipment

    • Blender
    • popsicle molds
    • popsicle sticks

    Ingredients
      

    • 5 cups strawberries
    • 1 Β½ cups champagne
    • ΒΌ cup agave nectar or honey optional

    Instructions
     

    • Add strawberries, champagne and sweetener to your blender.

    • Turn blender on and blend until you have a smooth mixture.

    • Divide strawberry champagne mixture between your popsicle molds, filling almost to the top. Cover with popsicle lid and insert popsicle sticks.
      Freeze 8 hours to overnight until popsicles are solid. Remove from popsicle mold and enjoy!
