SOURDOUGH BANANA NUTELLA MUFFIN INGREDIENTS
- 1 cup sourdough discard
- ⅓ cup pure maple syrup or honey
- ⅓ cup avocado oil or melted coconut oil
- 2 large eggs (or 1 flax egg for vegan)
- 2 teaspoons pure vanilla extract
- 4 overripe bananas, mashed
- ¾ cup flour (all-purpose, white wheat, whole wheat, or 1:1 gluten-free)
- 2 teaspoons baking powder (aluminum-free)
- 1 teaspoon baking soda
- ½ teaspoon salt

Store-bought chocolate hazelnut spreads may be delicious, but they’re often loaded with refined sugars, unhealthy oils, and preservatives. Making your own healthy homemade Nutella is surprisingly easy, and it’s the perfect nutrient-dense topping or mix-in for muffins!

Simple Healthy Nutella Recipe
- 1 ½ cups roasted hazelnuts (skins removed)
- ¼ cup unsweetened cacao powder
- ¼ cup pure maple syrup or honey
- 1 teaspoon pure vanilla extract
- 2 tablespoons melted coconut oil (or avocado oil)
- ¼ teaspoon sea salt
- 2-4 tablespoons milk of choice (for creaminess, optional)
Instructions:
- Blend hazelnuts in a food processor until they form a smooth butter.
- Add cacao powder, maple syrup, vanilla, melted oil, and salt, then blend again until fully incorporated.
- If needed, add milk, one tablespoon at a time, until you reach your desired creamy consistency.
- Store in an airtight jar at room temperature for a week or in the fridge for up to a month.
TIPS FOR MAKING SOURDOUGH NUTELLA SWIRL BANANA MUFFINS
USE OVER RIPE ALMOST BLACK BANANAS. This will give you the sweetest banana flavor.
MASH BANANA COMPLETELY. For a uniform muffin texture.
MIX DRY INGREDIENTS INTO WET INGREDIENTS UNTIL JUST COMBINED. Over mixing the batter can result in dense & chewy muffins instead of light & fluffy.
GENTLY SWIRL NUTELLA INTO MUFFIN BATTER WITH A TOOTHPICK. Make sure to swirl it in very gently so your nutella stays on top!
HOW TO MAKE THE BEST SOURDOUGH NUTELLA SWIRL BANANA MUFFINS
These sourdough discard banana muffins with nutella swirl are so easy to make! My toddler is obsessed with this one because, of course, chocolate. 🙂
Get started by mashing your over ripe bananas. Then, add the rest of the wet ingredients to the bowl with the 4 mashed bananas:
- 1 cup sourdough discard
- ⅓ cup pure maple syrup or honey
- ⅓ cup avocado oil or melted coconut oil
- 2 large eggs (or 1 flax egg for vegan)
- 2 teaspoons pure vanilla extract
Mix until all the wet ingredients are incorporated together.
Next, sift the dry ingredients in a separate bowl:
- ¾ cup flour (all-purpose, white wheat, whole wheat, or 1:1 gluten-free)
- 2 teaspoons baking powder (aluminum-free)
- 1 teaspoon baking soda
- ½ teaspoon salt
Add the dry ingredients into the wet ingredients and mix your sourdough muffin batter until it is just combined.
Scoop your sourdough banana muffin batter between the 12 muffin tins.
Add 1 teaspoon- 1 tablespoon of nutella to the top of each muffin.
Using the sharp point of a knife, gently swirl the nutella into the batter. The nutella is pretty thick, so you have to be very gentle with it.
FAQ'S
CAN I USE FROZEN BANANAS IN SOURDOUGH MUFFINS?
Yes! I like to freeze my bananas when they get to the stage of almost turning rotten to use in baking later or smoothies. They just as good as the un-frozen ones! The only thing you have to do differently is wait for them to thaw completely before mashing them up for your sourdough muffin batter.
WHY DON'T MY SOURDOUGH BANANA MUFFINS TASTE VERY SWEET?
This is not a super super sweet muffin recipe, so if you like things super sweet, you might want to add more sweetener. Also, to get the sweetest taste without too much sugar like I did, use over ripe bananas. Like the ones that look like they are about to be rotten. Those give the most sweet taste in muffins.

- In a large bowl, whisk together sourdough discard, honey, oil, eggs, vanilla, and mashed bananas until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
- Divide batter evenly into muffin cups, filling about ¾ full. Swirl in 1 tablespoon of homemade nutella into the top of each muffin.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool for 5 minutes in the pan, then transfer to a wire rack.
