Are smoothies with vegetables a good way to get veggies in?
Yes! As a registered dietitian I can say that whatever way you eat your vegetables, you are eating them! And the closer the vegetable is to its natural form, the more healthy benefits you will get from it.
Vegetable smoothie benefits:
- Decreases inflammation (since fruits and veggies are high in antioxidants)
- Gut healthy (fruits and veggies are rich in fiber which will help you poop!)
- Wakes you up! (high in nutrients that your body needs!)
- Great for weight loss! (high in micronutrients that are great for metabolism)
More fruit and veggie health benefits!
Each of my smoothie recipes can be eaten as a complete meal!
Each healthy fruit & veggie smoothie has:
- healthy carbs (in the yogurt, fruits and veggies)
- healthy fats (in the seeds and yogurt)
- protein (in the milk, yogurt and seeds)
What vegetables are best in smoothies?
This list of veggies for smoothies starts with the most flavorless vegetable, and moves on to ones that will give a little bit of flavor. Use the veggies at the top of this list if you're trying to make a smoothie with vegetables you can't taste!
- Zucchini
- Spinach
- Avocado
- Beet greens/leaves
- Cauliflower
- Kale
- Beets
- Carrots
There are so many healthy vegetables you can hide in smoothies! Thanks to the sweet taste of fruit, you can pretty much mask any flavor of vegetable.
NOTE: If you have high taste sensitivity, or your toddler is extremely picky, start with half the amount of the veggies in your smoothie first and work your way up.
First Smoothie with Vegetables Recipe: the Strawberry Beet Smoothie
This berry beet smoothie recipe is a great smoothie to sneak in some beets! Beets are rich in fiber, folate, manganese, potassium, iron, and vitamin C. They are also rich in antioxidants to help reduce inflammation.
Ingredients in the Strawberry Beet Smoothie:
- 1 fresh beet
- 1 cup frozen strawberries
- ½ frozen banana (add another ½ if you want it sweeter)
- 1 apple
- 1 cup milk of choice (add more for a thinner smoothie)
- ½ cup plain greek yogurt (use a bit of honey if you want it sweeter)
- 2-3 tablespoon flax, chia, or hemp seeds
Second Smoothie with Vegetables: the Banana Beet Greens Smoothie
Banana beet greens smoothie may look like poo, but it tastes great!
If you made my strawberry beet smoothie from above with fresh beets, don't throw away the beet greens! The tops of beets are super nutritious and you can add them to this smoothie! Beet greens are rich in Vitamin K, copper, manganese, iron and calcium.
If you don't have beet greens, you can easily swap in spinach or kale. Spinach has a much more subtle flavor than kale. Kale does take some getting used to.
Banana Beet Greens Smoothie Ingredients:
- 4 whole beet leaves (stems included!)
- 1 frozen banana
- ½ cup frozen mango (sub pineapple)
- 1 cup milk of choice (add more for a thinner smoothie)
- ½ cup plain greek yogurt (or flavored for a sweeter smoothie)
- 2-3 tablespoon flax, chia, or hemp seeds
Third up: the Avocado Pineapple Green Smoothie
This is my favorite smoothie with vegetables recipe! It is super refreshing and will make you feel like you're on some tropical island.
Avocados are an amazing vegetable because they are also a source of healthy fats! Avocados have folate, magnesium, potassium, riboflavin, niacin, vitamin C, and other B vitamins! And my favorite part about avocados? Eating 1 whole avocado gives you about half of the fiber you need in an entire day!!
Ingredients in Avocado Pineapple Smoothie:
- 1 cup spinach leaves
- ½ avocado (mash the other and serve on some avocado toast!)
- 1 cup frozen pineapple
- ½ frozen banana
- 1 cup milk of choice
- ½ cup vanilla greek yogurt
- 2-3 tablespoons hemp seeds
Fourth Smoothie with Veggies: Zucchini Cherry Smoothie
This cherry zucchini smoothie not only gives a mood boost with all that fiber and nutrients! But, it is also supportive of sleep health. Dark cherries help your body naturally produce melatonin for sleep!
Ingredients in Zucchini Cherry Smoothie:
- 1 cup frozen zucchini chunks
- ½ cup baby spinach leaves
- 1 cup frozen dark cherries
- 1 cup pink pitaya (dragon fruit)
- ½ cup cherry greek yogurt
- 1 cup milk of choice
- 1-2 tablespoons flax seeds or hemp seeds
- Bonus: 1 teaspoon reishi mushroom powder
Last but not Least: the Cauliflower Berry Smoothie
And finally, my gut balancing cauliflower triple berry smoothie! Cauliflower is rich in vitamin C, vitamin K, vitamin B6, folate, potassium, manganese, and other B vitamins! Actually, like kale, cauliflower contains a bit of almost every nutrient you need!
Ingredients in Cauliflower Triple Berry Smoothie:
- 1 cup frozen cauliflower chunks (steamed before freezing, or frozen cauliflower rice)
- 1 frozen banana
- ½ cup blueberry greek yogurt
- 1 cup frozen mixed berries
- 1 cup milk of choice
Don't have cauliflower? Substitute it for some frozen zucchini chunks! I love to freeze the extra zucchini from my garden during the summer and add it to my smoothies all winter long.
FAQ'S
Frequently asked questions about making a smoothie with vegetables.
Are vegetable smoothies as good as eating vegetables?
Yes! Since the vegetables in these smoothie recipes are raw or steamed, you are getting the full nutrition benefit from them!
How do I make a vegan smoothie with vegetables?
Simply use plant based milk and a plant based yogurt, like coconut yogurt, in place of the Greek yogurt! All other ingredients in my vegetable smoothie recipes are vegan friendly.
Should I use frozen fruit & vegetables or fresh in smoothies?
I personally like to use frozen fruit and vegetables in my smoothies. Frozen fruit and vegetables act kind of like ice cubes, keeping smoothies cold and refreshing for longer. You could also use a mix of fresh and frozen fruits and vegetables.
Frozen fruits and vegetables tend to make the smoothie a lot thicker, which I personally like. But, if you want your smoothie to be a bit thinner, either use a mix of fresh and frozen produce, or use frozen with more liquid.
