    Key lime pie balls! Looking for key lime desserts that aren't pie? Look no further than these sweet, tangy, and healthy key lime pie balls! My no bake key lime pie bites are made with good for you ingredients like coconut, cashew butter, and flax seeds!

    This is a super easy recipe to make as a snack or quick treat for the week ahead.

    KEY LIME PIE BALLS

    You just need a few simple ingredients for my key lime balls recipe!

    • Shredded coconut
    • Ground flaxseeds
    • Coconut flour
    • Raw honey
    • Creamy cashew butter
    • Coconut oil
    • 2 limes (or 4 key limes)

    HOW TO MAKE KEY LIME PIE BALLS

    These healthy key lime bites are so easy to make!

    To make your key lime pie energy balls simply add all ingredients to a medium sized mixing bowl: ¼ cup ultra fine shredded coconut, ¼ cup ground flaxseeds, ¼ cup coconut flour, ¼ cup raw honey, ¼ cup creamy cashew butter, 2 tablespoons melted coconut oil, and the juice and zest of 2 limes.

    Mix your energy ball ingredients well to combine. Place the bowl in the fridge for 10 minutes to let the batter firm up and allow the coconut flour to absorb the liquid.

    Remove from the fridge, roll the batter into 9 equal sized balls.

    Enjoy!

    How to make ground flaxseeds: if you don't have ground flaxseeds for your key lime balls not to worry! You can easily make ground flaxseeds from whole flaxseeds at home. Simply add ¼ cup of whole flaxseeds (gold or brown will work) to a coffee grinder. Grind until they are a fine texture like flour.

    How to zest a lime using a cheese grater: If you don't have a lemon/ lime zester, not to worry! You can zest a lime using a cheese grater. Just make sure it has the smaller hole side (as you don't want huge chunks of lime skin!). To zest a lime, first wash the skin under warm water. Next, rub the lime against the cheese grater just like you would cheese. Keep doing this until there is no green skin left on. Use the inside of the lime for fresh lime juice!

    How to store key lime balls:

    Store your coconut key lime energy balls in the fridge for up to a week! Or, you can store them in the freezer for about 3 months! Either way you store them, make sure you have them in an airtight container. I like to lay parchment paper along the bottom of the container to prevent them from sticking.

    Are energy balls actually healthy?

    Yes! Energy balls are healthy for you. They are high in protein, fiber, and other essential nutrients. Energy balls make a great snack, or a dessert alternative when you are craving something sweet.

    Serve these key lime pie balls to your guests as a dessert and call them key lime truffles, I bet they won't guess how many healthy ingredients are loaded inside!

    Is key lime healthy?

    Yes! Key lime is good for your health. Key limes are an excellent source of disease fighting vitamin C. Vitamin C is also necessary for skin health (collagen formation), and helps with iron absorption!

    These key lime energy balls are so easy to make and taste just like key lime pie! Sweet and tangy, key lime pie energy balls are made with healthy ingredients like coconut flour and flaxseeds. A perfect healthy treat!

    • Mixing bowl
    • Coffee grinder

    Ingredients
      

    • ¼ cup ultra fine shredded coconut
    • ¼ cup ground flaxseeds
    • ¼ cup coconut flour
    • ¼ cup raw honey sub pure maple syrup
    • ¼ cup creamy cashew butter
    • 2 tablespoon melted coconut oil
    • Juice & zest of 2 limes or 4 key limes

    Instructions
     

    • In a mixing bowl combine all your key lime energy ball ingredients: ¼ cup shredded coconut, ¼ cup ground flaxseeds, ¼ cup coconut flour, ¼ cup honey, ¼ cup cashew butter, 2 tablespoons melted coconut oil, and the juice & zest of 2 limes.
    • Mix ingredients until completely combined.
    • Roll into 9 even sized balls. Store in the fridge for up to a week!

    **If you only have whole flaxseeds: you can make ground flaxseeds very easily at home! Simply measure ¼ cup whole flaxseeds into a coffee grinder and grind until they resemble a fine powder (like flour).
    **How to zest a lime: if you don't have a lime/lemon zester, use your cheese grater! Use the smaller size to get a more fine zest. All you have to do to zest a lime is wash the outside of the lime under warm water, then as if you would do with cheese, grate the outside of the lime against the cheese grater. Do this until you have grated off all the green part of the lime.
    Then, you can juice the inside of your lime.
