Sourdough Discard Banana Muffins! Dare I say this is the best banana muffin recipe I've ever made! These fluffy banana walnut muffins with sourdough discard are so flavorful you're going to be coming back for seconds.
This is such a great sourdough discard recipe you can make in under 1 hour in just 1 bowl!
SOURDOUGH DISCARD BANANA MUFFINS INGREDIENTS
- bananas
- sourdough discard
- dark brown sugar
- avocado oil, melted coconut oil or butter
- eggs
- pure vanilla extract
- white wheat flour, all purpose flour, whole wheat flour, or a mix of both
- salt
- baking soda
- baking powder
- ground cinnamon
- chopped walnuts
HOW TO MAKE HEALTHY SOURDOUGH BANANA MUFFINS- SUBSTITUTIONS YOU CAN MAKE
If you want to make your sourdough banana muffins even healthier, the only substitution I would recommend is swapping out the brown sugar. My healthy sourdough banana muffins are already made with great ingredients like wheat flour, avocado oil, and bananas.
Healthier substitutions for brown sugar in banana muffins:
- Another mashed extra ripe banana
- Honey
- Date syrup
- Maple syrup
TIPS FOR MAKING THE BEST SOURDOUGH BANANA MUFFINS
THAW FROZEN BANANAS TO ROOM TEMP. If you are using frozen bananas in your sourdough discard banana muffins, make sure to thaw them first so they don't freeze the other ingredients.
USE FRESH BAKING POWDER AND BAKING SODA. Baking powder and soda need to be fresh to rise your banana muffins properly for perfect fluffy wheat flour banana muffins!
MIX DRY INTO WET INGREDIENTS TILL JUST COMBINED. Over mixing your batter can result in dense chewy muffins instead of fluffy muffins.
BAKE TILL A TOOTHPICK COMES OUT CLEAN. Baking times may vary based on your oven, so air on the side of checking them at less time.
HOW TO MAKE THE BEST SOURDOUGH DISCARD BANANA WALNUT MUFFINS!
Preheat your oven to 350 degrees Fahrenheit. Line 12 muffin tins with muffin papers. If you don't have muffin papers, you can easily grease the tins and then sprinkle flour in each one to prevent the muffins from sticking.
STEP 1: MIX WET INGREDIENTS
In a medium sized mixing bowl, mash 3 very ripe bananas. Yes you can definitely use frozen bananas in sourdough banana muffins! Just thaw your frozen bananas completely before mashing them.
Next, add the rest of your wet ingredients:
- ½ cup sourdough discard
- ¾ cup dark brown sugar
- ⅔ cup avocado oil sub melted coconut oil or butter
- 2 large eggs
- 2 teaspoons pure vanilla extract
Whisk very well to combine so that the sourdough discard is completely incorporated.
STEP 2: ADD DRY INGREDIENTS AND FOLD IN
Sprinkle the dry ingredients on top of the mixed wet ingredients:
- 1 ½ cup white wheat flour (sub all purpose flour, whole wheat flour, or a mix of both)
- 1 teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
Use a spatula to gently fold the dry ingredients into the wet ingredients. Make sure to fold and not stir for the most fluffy sourdough banana muffins! Once there is no more flour left visible in your batter, fold in the 1 cup of walnuts.
STEP 3: BAKE AND ENJOY!
Divide sourdough banana walnut muffin batter evenly between 12 muffin tins.
Bake for 25-30 minutes in your preheated oven or until a toothpick comes out clean.
Cool on a wire rack and enjoy!
