- Blueberries are an amazing source of antioxidants and nutrients for your skin! Antioxidants can help fight damage caused by pollutants and sun exposure to get your skin clear and glowing!
- Chia seed pudding is super high in fiber, which feeds your good gut bugs.
- Blueberry smoothie with cauliflower. This is filled with antioxidants, fiber, and nutrients to support gut health and hormone balance!
DO BLUEBERRIES MAKE SMOOTHIES THICKER?
You can make your blueberry smoothie thicker by using frozen blueberries instead of fresh blueberries! Fresh blueberries have a very high water content, which will actually thin out your smoothie.
WHY DOES MY BLUEBERRY SMOOTHIE CURDLE?
If you are blending blueberries with dairy milk, the smoothie needs to be drank immediately. If you let it sit, it will start to curdle. It curdles because of a protein enzyme in the milk reacts with the berries and gives a curdled texture.
If you want to make a blueberry smoothie ahead without curdling, simply use a dairy free milk, like flax milk or almond milk.
HOW TO MAKE A BLUEBERRY SMOOTHIE WITHOUT BANANA
My easy dairy free blueberry parfait is so delicious! You can make it with or without the blueberry smoothie on top.
Layer 1: Non Dairy Vanilla Yogurt
I used a soy yogurt for this one.
If you are not avoiding dairy for any reason, regular yogurt is just as good! And if you want a bit more protein, try a Greek yogurt!
Layer 2: Fresh Blueberries
Upstate New York has some of the most delicious blueberries when they're in season in the summer time. It is something I look forward to all year.
While there is no replacing a fresh, in season blueberries, you can definitely buy frozen blueberries and thaw them. The best thing to do if you're buying frozen blueberries is to mix it in with the yogurt so the blueberry juice mixes into the yogurt.
Layer 3: Dairy Free Vanilla Chia Seed Pudding
To make the chia seed pudding, place 2 tablespoons of your chia seeds in a bowl. Pour in half of your milk. Whisk it to combine. Let it sit while you are preparing your other ingredients.
Come back and stir again to make sure there are no clumps. You can then add the rest of your milk.
The problem a lot of people have with making chia pudding is that they only stir it once and end up with clumpy pudding. Stirring is key!
Layer 4: Dairy Free Blueberry Smoothie
The last layer of the blueberry parfait jar is my favorite layer of all!
Add frozen blueberries, frozen cauliflower, collagen or protein powder (optional), and a splash of plant milk to your blender. Blend until it is smooth and creamy.
Scoop on top of your chia pudding.
Enjoy!
