Homemade creamer is so easy to make and so much better for you! My sugar free pumpkin spice creamer recipe is sweetened naturally with dates. And another reason to make your own creamer is that it saves money!
A few years ago, when I was still fighting that morning rush hour traffic to get in to work, and guzzling my coffee behind the steering wheel.. I started noticing I was getting these really nasty stomach aches, and I could not for the life of me figure out what I was eating (or doing) to cause such bad stomach aches. I was starting to wonder if perhaps I had developed a stomach ulcer. So, being a dietitian, I did the only thing I could think of: I put myself on an elimination diet.
I eliminated all the acid causing foods, and wrote down everything that I was eating to the spices and condiments. It was then that I noticed that around the same time every day I would the the stomach ache no matter what I ate. And I thought about it.. what is one thing I eat every day at the same time.. coffee! I was using one of those caramel macchiato international delight creamers.
Now I know those coffee flavorings are not filled with nutritious ingredients, but they always have the most delicious flavors. And I really don't eat anything packaged or pre-prepared so I didn't think it was too bad to splash some into my coffee.. oh boy was I wrong. Right when I stopped using the creamer, my stomach aches went away! How nasty is that?? I'm not sure what exact ingredient caused it, but I know that the creamer does have a lot of artificial additives and flavorings in it.
Let's take a look at the ingredient label on a standard pumpkin spice creamer versus the homemade almond milk pumpkin spice creamer that I made.

My almond milk pumpkin spice creamer
Ingredients: raw almonds, pitted dates, filtered water, pure vanilla extract, pumpkin pie spice blend (cinnamon, ginger, cloves, nutmeg), pink sea salt.
Total ingredients: 6
ALMOND MILK PUMPKIN SPICE CREAMER INGREDIENTS
Raw almonds. Make sure you use raw almonds in any homemade nut milk recipe. The roasting process breaks down some of the fat in the almonds, which will not give you the same flavor or texture of your final nut milk product. Bonus if you can get your hands on some organic nuts.
Dates. Make sure you buy pitted dates! If you can't find pitted dates, remove the pits before blending them. Believe me, I accidentally blended the dates with the pits in them before and it was not good. LOL.
Filtered water. I use filtered water in anything I am cooking. We live in an area that has a high lead and contaminant in our pipes.
Vanilla extract. Make sure to buy pure vanilla extract!
Pumpkin pie spice is made from a blend of cinnamon, ginger, cloves, and nutmeg. You can easily make your own at home, but I tend to buy a pre-made bottle for the fall recipe season.
Pink salt is way better than conventional salt! If you are still buying conventional salt, make sure to buy sea salt and replace it. Conventional salt is bleached and many times has anti-caking additives.
TIPS FOR MAKING THE BEST HOMEMADE ALMOND MILK PUMPKIN SPICE CREAMER
SOAK ALMONDS OVERNIGHT. Soaking almonds softens their hard texture and allows for easy blending into dairy free pumpkin spice cream.
RUN YOUR BLENDER FOR THE RIGHT AMOUNT OF TIME. If you see big chunks of almonds left in your blender, keep running it till you see only small pieces.
USE A NUT MILK BAG TO STRAIN ALMOND MILK CREAMER. And keep your leftover almond pulp to make some great almond pulp treats!
SHAKE CREAMER WELL BEFORE USING. Shake almond milk creamer well before using your creamer! Separation is normal.

HOW TO MAKE HEALTHY ALMOND MILK PUMPKIN SPICE CREAMER USING YOUR BLENDER
My dairy free pumpkin spice creamer recipe is so easy to make.
Before you start, make sure you have:
- A high powered blender or food processor
- A nut milk bag (a fine mesh strainer could work, see below)
- Bottling jars
And, this recipe takes a little planning! The almonds blend best and give you the best flavor and texture if they are soaked overnight.
How to soak your almonds over night:
Add 2 cups of raw almonds to a large glass bowl or glass container. Cover completely with cool filtered water. Cover your bowl with a lid and place in the refrigerator to soak overnight.
How to make homemade almond milk pumpkin spice creamer:
The next day, drain the water from your almonds. Add the almonds to a blender along with: 6 pitted dates, 4 cups cool filtered water, 1 tablespoon vanilla extract, 1 tablespoon pumpkin pie spice, ½ teaspoon pink sea salt.
Turn your blender on medium and let it run for ~5 minutes.
If you notice large chunks of almonds left in the mixture, let it run for longer. You want the almonds to be pretty finely ground up.
HOW TO STRAIN ALMOND MILK CREAMER
The best way to strain your creamer is through a nut milk bag.

Okay, so when I made this pumpkin spice creamer I had to get a little creative because my nut milk bag seems to have gone missing. Seriously, I searched in every crack and crevice of my kitchen. [Sigh] But I think it is really lost, so I await my amazon order to arrive with my new one.
Here is how I strained my pumpkin spice creamer this time with NO nut milk bag:
I slowly poured it though my fine mesh strainer about ¼ of the creamer at a time. Then, I pressed down so that all the liquid would come out of the pulp. I transferred the pulp into a container to use in an almond pulp recipe later.
And it did not turn out bad, not bad at all! My friends came over and had it in their chai tea and loved it!
HOW TO STORE ALMOND MILK PUMPKIN SPICE CREAMER
Store your almond milk pumpkin spice creamer in the fridge for up to a week. I use swing top glass jars to store mine. But, if you don't have those you can easily store it in a glass mason jar with a sealing lid.

- 6 dates, pitted
- 4 cups cool filtered water
- 1 tablespoon pure vanilla extract
- 1 tbsp pumpkin pie spice
- ½ teaspoon pink sea salt

- Before you start: this recipe requires an overnight soak so plan ahead!
- Add 2 cups raw almonds to a a glass bowl or container. Cover completely with water. Cover your bowl with a lid. Place in the fridge to soak overnight.You can leave it on the counter at room temperature if you live in a cooler climate.
How to make almond milk pumpkin spice creamer:
- The next day, drain the water from the soaked almonds.Add the almonds to a blender or food processor along with: 6 pitted dates, 4 cups cool filtered water, 1 tablespoon vanilla extract, 1 tablespoon pumpkin pie spice, and ½ teaspoon pink sea salt.Turn the blender on medium speed and let it blend for ~5 minutes.The almonds should be very finely ground.
How to strain the almond milk pumpkin spice creamer:
- Add a nut milk bag to a large mixing bowl. Pour the mixture through the center of the nut milk bag, make sure the bag does not tip over. You don't want any of the pulp chunks in your creamer.
- Squeeze the nut milk bag as much as you can until there is no more liquid coming out.
- Transfer your creamer to glass jars with tight fitting lids for storage. Store in the refrigerator for up to a week and enjoy!
- NOTE: Shake well before using. Separation is normal.
